This is pretty basic of a recipe, but my fajitas HAVE TO HAVE only ONE kind of fajita seasoning mix...and that is the Kroger brand. No other fajita seasoning compares...not McCormick, not Taco Bell, NOTHING. So if you don't have a Kroger near by...find a friend or family member and make them send you some. LOL. My husband's mom sends me some when I run out :)

This is a recipe that I have been making for years on end. Nick and I used to grocery shop for my family when I was 17 and he was 18 and we would make steak fajitas for lunch. We have dubbed them steaky hitas. They are very much a comfort food in our relationship :)

What you need:
  • Steak, cut into strips or bite-size pieces
  • 1 to 2 green bell peppers, cut into strips
  • 1 onion, cut into half moon slices
  • 1 packet Kroger fajita seasoning
  • 1/4 cup water
  • Desired toppings: sour cream, cheddar cheese, etc.
Directions:
  1. Cook onions and green bell peppers in vegetable oil over medium-high heat until onions begin to turn translucent and the peppers are tender.
  2. Meanwhile cook the steak until brown over medium to medium-high heat.
  3. Add steak in with the vegetables. Then add the packet of seasoning and water. Simmer for 5 minutes.
  4. Serve with toppings, if desired.

I don't always make tacos, burritos, or fajitas for Tuesdays. I enjoy these Tex Mex Pork Chops because they are one pot and made in under 30 minutes. Fajitas are great in pasta form too and this Steak Fajita Pasta from Crazy For Crust is making my mouth water.
