Melt in Your Mouth Banana Bread and a Giveaway!

Food.com member Mysterygirl wasn't kidding when she said melt in your mouth! This is only the second recipe for banana bread that I've tried because my other one is tried and true. This recipe is so moist and delicious! It's almost like cake!

(Print)
What you need:
  • 3/4 cup oil
  • 4 large eggs
  • 2 cups banana, smashed
  • 2 cups flour
  • 2 cups sugar
  • 1 (3 1/2 oz.) box French vanilla instant pudding
  • 1 tsp. salt
  • 1 tsp. baking soda
Directions:
Preheat oven to 325. Grease one loaf pan or four mini loaf pans and place on a baking sheet.
Mix together oil, eggs and bananas.

Add the rest of the ingredients and stir.

Pour batter into the greased loaf pans. Bake for an hour (for one loaf pan) or 45 minutes (for four loaf pans).

Lower heat to 300 and remove from oven. Shake gently to see if it is set. You can cover with foil if you feel it is getting too dark. Cook for 5 to 10 minute increments until middle is set. I believe, I cooked mine a total of 1h and 30 min.

I am one of your new followers and I would love the Pioneer Woman cook's. I am new to the USA and have so much to learn and try!On the other hand I sometimes post European recipes which might not be so well known here in the USA. Like yesterday I posted about blueberry wine vinegar.

This looks and sounds delicious. I love the idea of a pudding mix in the batter. I know it has to taste good. Thanks for sharing on A Well-Seasoned Life's Sweet Indulgences Sunday.

Awesome giveaway! I have tried many Pioneer Woman recipes and loved them all. My favorite is probably her white chicken enchiladas or her beef enchiladas, really hard to choose.

I am a follower.

I have both of these cookbooks on my wish list! I've tried quite a few of Ree's recipes, but mine and my families favorite so far is the Homemade Chicken Strips. We LOVE them.
