Mom's Tacos

These were unbelievably delicious! I cannot even describe their amazingness - you have to try them!!! The Rotel was a perfect mix-in for the regular taco mix :) Also, it's hard to photograph soft shell tacos!!

What you need:
  • 1 tbsp. olive oil
  • 1 cup chopped sweet onion
  • 1/2 lb. ground turkey
  • 1/2 lb. ground beef (I used all beef)
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 (15.5 oz.) can chili beans (or any beans), drained (I omitted this time, but will try next time!)
  • 1 (10 oz.) can Rotel
  • 10 to 12 tortillas, warmed
  • Taco fixings (lettuce, tomato, sour cream, cheese, etc.)
Directions:

Saute onions until tender in olive oil over medium-high heat.
Add meat and cook until browned.

Mix dry ingredients into a small bowl and sprinkle over meat.

Pour chili beans and Rotel. Heat for 10 more minutes.

Fill tortillas and top with desired fixings.

    Menu Plan Monday - 5.30.2011

    So I'm really late on this one. I figured while what I assumed to be guys came over to clean my carpet - a free shampooing I "won" - turned into a 6 hour long girl trying to sell me a Kirby ($2500)...she vacuumed my couch, living room and mattress. She shampooed a SPOT on my carpet. UGHHHHH. I didn't even get to go grocery shopping and we ended up eating McDonald's for dinner.

    But I digress...
    Here's what we're eating this week (minus today) with a lot of repeats from last week:

    Tuesday: Baked Oatmeal with Berries, Broccoli Shells & Cheese, Italian Drip Beef on Easy Dinner Rolls

    Wednesday: Bacon & Egg Toast Cups, Chicken nuggets and french fries, Provalone Chicken with Baked Potato Skins and salad

    Thursday: Cereal, pizza, Coney Island Hotdogs with corn on the cob and chips

    Friday: Silver Dollar Pancakes with Blueberry Syrup, Tuna Noodle Casserole, Broccoli Fettuccine Alfredo

    Saturday: Chocolate Chip Muffins, Hot dogs with yogurt and rice cakes, Freezer Meal

    Sunday: Poptarts, Grilled Cheese with yogurt and chips, Cheesy Chili Mac

    Extras: The Chewy, PB Lovers' Candy Cookie Bites, Root Beer Float Cookies, S'Mores Stuffed Chocolate Chip Cookies

    Strawberry Lemonade


    This was an adaptation from a Betty Crocker recipe for Raspberry Lemonade. I've got a bit of a flavored lemonade obsession going on and this was absolutely perfect!


    What you need:
    • 3/4 cup sugar
    • 1/2 cup water
    • 1 cup fresh lemon juice (about 4 lemons)
    • 3 1/2 cups water
    • 1 container (16 oz.) frozen strawberries in syrup, thawed (The original recipe calls for 10 oz. of raspberries)
    • 3/4 cup water
    Directions:
    1. Mix sugar and 1/2 cup water in a small saucepan. Heat over medium, stirring one time, until sugar is dissolved. Let cool.
    2. Mix sugar syrup, lemon juice, and 3 1/2 cups water into a nonmetal pitcher.
    3. Strain syrup from thawed fruit into the pitcher, reserving berries; refrigerate.
    4. Distribute berries evenly in an ice cube tray, then using the 3/4 cup water, fill the sections up. Freeze for around 2 hours or until firm.
    5. Serve the lemonade with the berry ice cubes :)

      Sticky Chicken in the Crockpot

      This was incredibly good :) I love baking meat in the crockpot - it always turns out so moist and tender! I ended up using breasts instead of a whole chicken and cooked it on high for 3 1/2 hours. My friend, Brandi, said she adds lemon halves inside the chicken sometimes. I'm going to try that next time we make it!

      What you need:
      • 1 tsp. salt
      • 2 tsp. paprika
      • 1 tsp. onion powder
      • 1 tsp. thyme
      • 1 tsp. white pepper
      • 1/2 tsp. garlic powder
      • 1/2 tsp. black pepper
      • 1 large roasting chicken (3 to 4 lbs.) - I used chicken breasts
      • 1 medium onion
      Directions:
      In a small bowl, combine all spices. Remove giblets from chicken, clean the cavity. 
      Rub spice mixture into chicken, inside and out.

      Cook in crockpot on low for 6 to 8 hours

        Savory Meat Loaf

        I really liked this recipe for meatloaf. It actually reminded me a lot of my mother-in-law's :)

        What you need:
        • 1 1/2 lb. lean ground beef
        • 1 cup milk
        • 1 tbsp. Worcestershire sauce
        • 1 tsp. chopped fresh sage leaves or 1/4 tsp. dried sage leaves
        • 1/2 tsp. salt
        • 1/2 tsp. ground mustard
        • 1/4 tsp. pepper
        • 1 garlic clove, finely chopped or 1/8 tsp. garlic powder
        • 1 egg
        • 3 slices bread, torn into small pieces
        • 1 small onion, chopped (1/4 cup)
        • 1/2 cup ketchup, chili sauce or barbecue sauce
        Directions:
        Heat oven to 350.
        Mix all ingredients except 1/2 cup sauce. 

        Spread into an ungreased loaf pan. Spread ketchup or sauce on top.

        Bake, uncovered, for 1 hour to 1 hour 15 minutes 
        or until a meat thermometer stuck in the center reads 160.
