Grilled Italian Pork

I wanted to make pork of some sort and thought that I'd try marinating it in Italian dressing. I have done chicken that way and steak that way too, which have never been disappointing. I wasn't disappointed this time either. It was delicious!

What you need:
  • Pork (chops, boneless ribs, loin)
  • Salt and pepper
  • Italian dressing
Directions:

Salt and pepper both sides of the pork, I believe mine were boneless pork ribs, but I have no clue.
Place in a bowl with dressing and cover. Marinate for however long you want. I did mine for 30 minutes.

Baked Hasselback Potatoes

I've been eyeing hasselback potatoes for a while now. They look so frickin' good and boy, was I right!

What you need:
  • 4 medium potatoes, scrubbed
  • 4 cloves garlic, thinly sliced (I used refrigerated, minced garlic)
  • 3 tbsp. olive oil
  • Salt
  • Pinch smoked paprika
  • 2 tbsp. Parmesan cheese
  • Chopped chives, for garnish
Directions:
  1. Preheat oven to 425*
  2. Slice potatoes across very thinly, down to 1/4-inch of the bottom of the potato.
  3. Combine olive oil, salt, paprika and cheese in a small bowl.
  4. With the potatoes on a baking sheet, spoon mixture into the slices of the potatoes. Anything leftover can be rubbed on the outside of the potatoes.
  5. Bake for 40 to 45 minutes.
  6. Garnish with chives and more Parmesan, if desired.

Pizza Bites with Basic Pizza Dough

The pizza bites were a huge hit! My kids devoured them. The pizza dough was very easy and quick. AND it made enough for 2 pizzas, so I was able to freeze half the recipe to use at a later time. I'm thinking perhaps Copycat Domino's Cinna Stix :)

What you need:
  • 1/2 batch pizza dough (recipe below)
  • 4 oz. mozzarella cheese, cubed (I used shredded)
  • Sliced pepperoni
  • For topping: Olive oil, Italian seasoning and Parmesan cheese
Pizza Dough (not sure where I got it):
  • 1/2 cup warm water (about 110*)
  • 1 envelope instant yeast
  • 1 1/4 cups water, room temp
  • 2 tbsp. EVOO
  • 4 cups bread flour, plus some
  • 1 1/2 tsp. salt
  • Nonstick cooking spray
    Directions:

    Place 1/2 cup water into a measuring glass and mix in yeast. Let stand about 5 minutes.

    Add room temp water and olive oil; stir to combine.

    Place flour and salt in stand mixer with paddle attachment and stir just to combine on a very low speed.

    Slowly add the water-yeast mixture and continue to mix on low.

    Once it is mixed, replace paddle with dough hook. Knead with dough hook for 5 minutes

    Form the dough into a ball and place in a bowl that has been sprayed with nonstick cooking spray. 
    Cover with plastic wrap and let rise for 1 1/2 to 2 hours. Press to deflate.

    Divide the dough into two equal pieces. Wrap and freeze half to use later.
    Then divide the remaining half into 20 to 24 pieces.

    I flattened out all my dough because I used shredded mozzarella. Add cheese and pepperoni.
    Pull the dough to cover filling and pinch to close.

    Place dough balls, seam-side down into a greased 9-inch baking dish.

    Brush with olive oil and sprinkle with Italian seasoning and grated Parmesan cheese (which I didn't realize until now, but apparently I forgot)

    Bake for 20 minutes or until golden brown.

    Serve warm with sauce - I used pizza sauce :)

    Bacon Chicken Alfredo Pasta

    This was unbelievably good! I cannot even describe how delicious because I wouldn't even get close to how good it is!

    What you need:
    • 1 1/2 cups rotisserie-style chicken, shredded
    • 1 cup diced ham
    • 1 tbsp. brown sugar
    • Bacon
    • 1 roma tomato
    • 5 to 6 stalks asparagus (Jonna adds that you can really use any vegetable that your family likes or omit it completely)
    • 1 cup grated Parmesan cheese
    • Pasta, whichever you want (I used penne and elbow macaroni because I didn't have enough of either to make enough pasta for us to eat alone)
    Sauce:
    • 1 cup milk
    • 1 cup chicken broth (I make mine with water and chicken bouillon)
    • 1 cup whipping cream
    • 1 cup shredded Cheddar cheese
    • 1 cup grated Parmesan cheese
    • 2 tbsp. buttter
    • 2 tbsp. flour
    • 1/4 tsp. garlic powder
    • 1/4 tsp. onion powder
    • Red pepper flakes (optional)
    • 1 tsp. white sugar
    • 1/2 tsp. cracked black pepper
    Directions:
    Fry bacon until crispy; drain on paper towels.

    Fry pieces of ham in bacon grease (I drained off some first to prevent horrible heartburn and indigestion). Sprinkle brown sugar on top. Ham is done when it is golden and sugar is caramelized.

    Cook asparagus (I steamed mine). Chop tomato and asparagus. Set aside. I put mine with the chicken.

    Over medium heat, melt butter.

    Add flour, seasonings and sugar. Whisk until it is bubbly.

    Continue whisking, slowly add in milk, cream and broth. Keep whisking until sauce is thickened. 

    Turn down the heat until low and add cheeses. Once melted, cover.

    Prepare pasta al dente and drain.

    For serving, you can do one of two things...
    1) The original recipe calls for serving the sauce over the pasta topped with crumbled bacon, ham, asparagus, tomato, chicken and grated Parmesan.
    OR
    2) My lazy way: mix chicken, tomato, bacon, ham and asparagus into the sauce and serve over pasta. Leave out the extra Parmesan - I'm not the biggest fan.
