Blueberry Cream Cheese Bread

I have been wanting to make this recipe for so long! It's got a "cheesecake-like filling" and a glaze AND blueberries! Can you say perfect with a cup of coffee? And it was everything that I was hoping for and more. It was like a loaf cake. Super delicious. It kept really well, even though it didn't last that long in the house :)

(Print)
What you need:
For the filling:
  • 8 oz. cream cheese, softened
  • 1/2 cup sugar
  • 1 tbsp. flour
  • 1 whole egg
  • 1 tbsp. orange zest
For the glaze:
  • 2 tbsp. sugar
  • 1/2 tsp. vanilla
  • 1 tsp. water
For the bread:
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 2 whole egg yolks (you'll be using the whites!)
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/3 cup milk
  • 1 1/2 to 2 cups blueberries
  • 1 tbsp. flour
  • 2 whole egg whites
  • 1/4 cup sugar
Directions:
  1. For the filling: Combine all ingredients and beat until smooth. Set aside.
  2. For the glaze: Stir together all ingredients and set aside.
  3. For the bread: Cream together butter and 1/2 cup sugar until fluffy.
  4. Add salt and vanilla. Add egg yolks (remember to save egg whites!) one at a time and beat until creamy.
  5. In a separate bowl, combine 1 1/2 cups flour and baking powder.
  6. Alternate adding dry ingredients and milk to the wet ingredients. Mix until just combined.
  7. In a small bowl, toss blueberries with 1 tbsp. flour. Add them to the bread batter.
  8. In another bowl, beat egg whites until soft peaks form. Add 1/4 cup sugar a tablespoon at a time until stiff peaks form. I used my stand mixer to do this for me while I was preparing the rest of the stuff. Fold into the batter.
  9. Pour a little less than half the batter into a greased, floured bread pan.
  10. Then pour the filling over the top of the batter. Finish off with the remainder batter. Pour glaze on top.
  11. Bake at 350* for 55 to 60 minutes.
