Blueberry Cream Cheese Muffins

I believe that I found this recipe through the Crazy Cooking Challenge. You bet your patootie I wanted to make them. I loved the cream cheese in them. They had a rich butter taste to them too. I couldn't stop eating them!

What you need:
For the muffins:
  • 1/2 cup butter, softened
  • 1 1/4 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/2 cups flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 cup milk
  • 8 oz. cream cheese, cubed
  • 1 1/2 cup blueberries
  • 1 tsp. lemon zest
For crumb topping:
(I omitted because I was lazy that morning - no shame)
  • 1/4 cup sugar
  • 1/4 cup flour
  • 2 Tbsp. cold butter, cubed
Directions:
For muffins: 
Cream together butter and sugar.

Add eggs and vanilla.

Add flour, baking powder, baking soda, and salt.

Add milk.
Fold in cream cheese.

Fold in blueberries and lemon zest.

Divide into muffin tins.

For topping: 
Mix together sugar and flour. Cut in butter.
Sprinkle topping on the muffins.
Bake at 350* for 20 to 25 minutes.

HOLY DELICIOUS. Blueberry has always been my favorite muffin, but this takes it to a new level. Yum!
