Fresh Spinach & Tomato Tuna Pasta

I was watching a bunch of Giada at Home one weekend. It was nearing lunchtime and I was really craving some pasta. So I took to my kitchen and searched my fridge and pantry for different ingredients to put together. The particular episode I was watching she used spinach in her pasta.

I'm lucky to live with 3 other people who love spinach as much as I do. It's nice to add it in to dishes because it's a great source of iron and with my anemia, I need all the iron I can get!

What you need:
  • 1 lb. angel hair pasta
  • Olive oil
  • 2 cups baby spinach
  • 1 tomato, finely diced
  • Tuna - I used Hickory Smoked, definitely want to try the lemon pepper one soon!
  • Italian cheese (like Parm-Regg)
Directions:
Cook pasta al dente and toss with olive oil.

Stir in spinach while pasta is still hot, it will wilt down.

Stir in tomato and tuna.

Last, but not least, stir in the cheese.
