Spring Asparagus & Gouda Quiche | A great springtime breakfast #recipe

Oh yes, it's time once again for Secret Recipe Club. This month I got Laura of A Healthy Jalapeno as my assignment. Laura is a fellow army wife and she has a boatload of amazing recipes on her blog. I actually made two of her recipes.

The Slimmed Down Turkey & Spinach Meatloaf and this Spring Asparagus & Gouda Quiche - both were so good and everyone in the family loved them, but with the first, I got the worst pictures known to mankind! This quiche's pictures are passable, so I decided to share it. I've been on a huge asparagus kick lately and I had a ton of gouda in my fridge - thanks to Gouda's new biggest fan, my husband.

What you need:
  • 1/2 Tbsp. butter
  • 1 1/2 shallots, minced
  • 1 garlic clove, minced
  • 1 bunch asparagus, chopped
  • 1 cup gouda, shredded
  • 4 eggs
  • 1 cup half-and-half
  • Pinch of nutmeg
  • Salt and pepper
  • Pie crust
Directions:
  1. Melt butter in a skillet and cook shallots for 1 to 2 minutes. Add garlic and asparagus and cook for 2 to 3 more minutes. Season with salt and pepper.
  2. Add asparagus and cheese to pie crust, smooth as evenly as possible.
  3. Beat eggs with half-and-half, nutmeg, and salt and pepper. Pour over asparagus and cheese.
  4. Bake at 350* for 55 to 60 minutes. Let stand 15 minutes before serving.

  2. Quiche is probably my favorite food group! This looks perfect--I will try it soon.
    I agree, meatloaf is hard to photo. I did a post once on a yummy meatloaf and I actually got the best photo before cooking! Meat is difficult.

  3. This is a perfect recipe for spring and one that would go nicely on an Easter brunch or dinner table. Love the addition of the gouda cheese. YUM!!!

  5. GReat recipe pick, both of them actually... and just in time for Easter. My family is doing a huge Easter brunch so I will be breaking this recipe back out again, it was a crowd favorite.

  9. Asparagus just sings "Spring!", and this recipe celebrates it deliciously. Add a dusting of lemon zest and I'm in quiche heaven.
