Today's Sunday Supper Movement event is BACK TO SCHOOL DINNERS. I decided to go with a one pot meal because to me, one pot/skillet/dish meals are the easiest recipes for busy nights. I hate doing dishes and I certainly don't want to do them after a really long, hectic day.

When I was a kid, we had a lot of the same foods over and over again and one of my favorites was goulash. My mom made it with a can of tomato soup, ground beef, onions, and pasta. Still to this day, I crave it every so often because it was such a staple for a fast, easy, inexpensive dinner. My mom definitely knew what she was doing. I love this variation of goulash because it's a little more hearty and it just right for Taco Tuesday.

What you need:
  • 1 1/2 lb. ground beef
  • 3 Tbsp. tomato sauce
  • 1 1/2 cups beef broth
  • 1 can Rotel, drained
  • 1 Tbsp. taco seasoning
  • 2 cups uncooked egg noodles 
  • Shredded cheddar cheese, for garnish
  • Sour cream, for garnish
Directions:
  1. Cook ground beef in a deep skillet over medium-high heat. Drain, if needed.
  2. Add remaining ingredients and bring to a boil.
  3. Reduce heat to medium and cook for 10 minutes, stirring occasionally, until noodles are cooked.
  4. Serve with cheddar cheese and sour cream.
