Stuffed Shells with Meat Sauce

This is only the second time I've made stuffed shells. I think they are pretty good, but I also wish there were something other than ricotta that could be used (and not cottage cheese). I'm really not a big fan of ricotta. I don't think the kids are either because they didn't eat much. Do y'all have a suggestion for a substitution for ricotta?

What you need:
  • 1-2 boxes jumbo shells
  • 1 lb. ground beef
  • Garlic
  • 1/2 cup chopped onion
  • 4-6 cups pasta sauce
  • 2 (15 oz) cartons ricotta cheese
  • 1 tbsp. parsley
  • 1/2 cup chopped spinach (I didn't have any)
  • 1 cup shredded Parmesan cheese
  • 2 cups shredded Italian blend cheese
Directions:
Preheat oven to 350. Brown meat with garlic and onions and drain.
Add sauce and let simmer while you prepare the pasta al dente. Drain pasta.

In a bowl, mix ricotta, parsley, spinach and Parmesan 
(I just realized that I did it wrong. I really need to learn how to read through recipes. LOL). 
I put a little sauce in the bottom of my baking pan. Spoon cheese mixture into shells and place in pan.


Pour meat sauce over stuffed shells and top with Italian cheese 
(I mixed that with the other cheeses and stuffed it in the shells - whoopsies). 
Bake for 20 minutes.
