Streusel Topped Blueberry Muffins

These muffins were very light and fluffy. They may be the very best homemade muffins I've made. The streusel topping is a delicious addition to the muffins too!

What you need:
  • 1 3/4 cup flour
  • 2 3/4 tsp. baking powder
  • 3/4 tsp. salt
  • 1/2 cup sugar
  • 1 large egg
  • 3/4 cup buttermilk
  • 1/3 cup canola (or vegetable) oil
  • 1 cup fresh or frozen blueberries
  • 1 tbsp. flour
  • 1 tbsp. sugar
For Streusel Topping:
  • 1/4 cup sugar
  • 2 1/2 tbsp. flour
  • 1/2 tsp. cinnamon
  • 1 1/2 tbsp. butter
Directions:
Combine flour, baking powder, salt, and sugar. Make a well in the center.

Whisk together egg, buttermilk, and oil.

Add egg mixture into flour mixture and stir until just combined.

In a bowl, toss blueberries with flour and sugar.

Fold into batter. Spoon batter into greased muffin tin or lined muffin tin.

Mix together 1/4 cup sugar, flour, and cinnamon. Cut butter into until mixture is crumbly.

Sprinkle over batter and bake for 18 minutes.

Cool for 5 minutes in pan and then move to a wire rack.
