Cheesesteak Quesadillas

Keeping with my trend of cheesesteak recipes, today I'm sharing these quesadillas. Quesadillas are one of my favorite things to make for lunch because it's a fast fix and the possibilities are endless. I've been getting more comfortable with using beer in recipes and even though I only had old Budlight, it still turned out really well.

Recipe adapted from Patio Daddio BBQ

What you need:
  • Sliced provolone
  • Flour tortillas
  • 1 cup deli roast beef, chopped
  • 1 small yellow onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 tsp. olive oil
  • 1 tsp. hot sauce
  • 1/4 cup beer
  • 1/4 tsp. garlic salt
  • Cooking spray
Directions:
Saute peppers in olive oil over medium-high heat for 2 minutes.
Add onions and saute for 2 more minutes.

Then add garlic salt, beer, and hot sauce, cooking for 2 more minutes.

Add meat, stir until heated through, remove from heat, and set aside.

Spray a clean skillet with cooking spray and heat to medium or medium-high heat. Lay down one tortilla and add cheese slices to half the tortilla. Then top with meat/veggies and flip empty side over the top of the fillings. Brown on both sides of quesadilla, then remove to a plate.
Cut with a pizza cutter into 4 pieces. Serve warm.
