Nacho Bake

I used to make this recipe all the time when I was first married. It's been brought to the company for FRG meetings. It's been served to friends. It's been recommended to friends. But I hadn't blogged it until now. I actually hadn't made it since 2008 because I was a bit burned out from eating it all the time. But we made it - this time using medium heat salsa - and it was just as good as I remember it being!

What you need:
  • 1 pkg. shells and cheese
  • 1 lb. ground beef
  • 1 packet taco seasoning
  • 3/4 cup water
  • 3/4 cup sour cream
  • 3/4 cup shredded Cheddar cheese, divided
  • 3/4 cup salsa
  • 1/2 cup crushed tortillas chips
    Directions:
    1. Cook pasta according to directions and drain. Add cheese from box and sour cream; stir well.
    2. While pasta is cooking, brown meat and drain. Add taco mix and water; simmer for 5 minutes.
    3. Spoon half pasta into a 8-inch square baking dish.
    4. Top with meat mixture and half of cheese.
    5. Then top with rest of pasta mixture.
    6. Cover and bake at 400* for 15 minutes.
    7. Remove from oven and top with salsa, remaining cheese, and chips.
    8. Bake, uncovered, for another 5 minutes.
