What you need:
- Potatoes
- Sea salt
- Pepper
- Oil
Slice potatoes into fries and pat dry.
Heat 2 inches of oil to 350* in a large pot.
Fry in batches for about 4 to 5 minutes. Then let drain on a paper towel.
Increase oil to 400* and fry a second time until the fries are golden brown. Drain on paper towel.
Season with salt and pepper.

So the two-step frying process really works huh? That would make it a great freezer item. Fry once, flash freeze, then fry them a second time when you want some. I'll have to test that theory and find out.
