I love a soup that has spinach and zucchini in it as well. They are my two favorite veggies. I could eat them every day for the rest of my life. They are amazing veggies. This soup was everything I could've asked for and more.
My husband is usually a stickler for breaking up meat into smaller pieces (which his mom is like an expert at)...but I didn't bother to try and microcrumble this sausage and he didn't complain.

What you need:
- 1 lb. Italian sausage
- 1 clove garlic, minced
- 2 cans beef broth
- 1 can Italian tomatoes
- 1 cup sliced carrots
- 1 can Great Northern beans
- 2 small zucchini
- 2 cups spinach
- 1/4 tsp. pepper
- 1/4 tsp. salt
- Brown Italian sausage in pan, adding garlic in last minute of cooking.
- Stir in beef broth, tomatoes, and carrots. Cover and reduce to a simmer for 15 minutes.
- Stir in beans and zucchini. Cover and simmer for 15 minutes.
- Remove from heat and add spinach. Let sit for 5 minutes.
- Salt and pepper to taste.
