Weeknight Garlic Chipotle Burgers

This gorgeous burger...*sigh* I can't even with these pictures. They make me wish that here at 10:30am that I had it right in front of me to devour. I can't remember now if it was my first experience with chipotle mayonnaise or not, but I am in love with it and it was so good on this burger. I branched out from my stickler way of liking only salt and pepper on my burgers. It was a good branch out. The red onion also complimented the chipotle perfectly.

The original recipe had different seasoning that I could not find. You kind of have to go with the flow and see what you can find at your local store. It was also to make 3 burgers - doubles. I have not really had much luck with making double cheeseburgers, so I went the single route.

What you need:
  • 1 to 2 lb. ground chuck (80/20)
  • Southwest Chipotle seasoning or something similar
  • Garlic powder
  • 2 Tbsp. butter
  • Chipotle or pepperjack cheese
  • Good quality hamburger buns, toasted
  • Chipotle mayo
  • Lettuce
  • Tomato
  • Red Onion, sliced
  • Pickles
Directions:
  1. Form ground chuck into 6 patties and season with chipotle seasoning and garlic powder.
  2. Heat a large skillet or cast iron over medium-high heat. Add butter and coat the pan while it melts.
  3. Add patties (you may have to do 2 batches) and cook for 5 to 7 minutes, flipping once. Don't squish them with the spatula.
  4. Top with cheese and let melt.
  5. Serve on toasted buns with mayonnaise on top and bottom, lettuce, tomato, pickles, and red onion.
