Philly Cheesesteak Soup

The creamiest, most comforting soup with all the goodness of a Philly cheesesteak sandwich!


It's crazy to me to think that when I met my husband, even up into the first few years of our marriage, I didn't really care for Philly cheesesteaks or soup. And now here we are 15 years later and I'm eating a combination of the two and loving it. This is a thicker, stick-to-your-ribs kinda soup and although I don't like eating them all the time, I definitely crave them from time to time. There's really not a whole lot that can be said about this soup - if you like Philly cheesesteak, you're gonna like this soup. It's so creamy and comforting!

What you need:
  • 2 Tbsp. extra virgin olive oil
  • 1 cup diced yellow onion
  • 1 cup diced green bell pepper
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups half and half
  • 1 cup whole milk
  • 3 tsp. chicken bouillon powder
  • 8 oz. cream cheese, softened
  • 1 to 2 lb. steak, grilled and cut into strips
  • Salt and pepper, to taste
  • Shredded provolone for garnish, if desired
Directions:
  1. In a large skillet, heat olive oil over medium-high heat. Add onion and green bell and cook until onion has softened. Remove and set aside.
  2. In a large saucepan, melt butter over medium heat. Add flour and stir.
  3. Then slowly add half and half, milk, and bouillon powder. Stir until thickened. 
  4. Add cream cheese and stir until melted.
  5. Add steak, onions, and peppers. Stir well. Salt and pepper to taste.
  6. Serve garnished with provolone - beware that a little goes a long way!
