Salted Nut Roll

This classic candy has a nougat center wrapped in caramel and peanuts!

I have always loved Salted Nut Roll candy bars and was totally miffed when I moved to Tennessee and couldn't find them. I was really happy to discover that Paydays were the same thing. This candy is something I had often at holiday time as a child and it's not exactly the same as a Salted Nut Roll candy bar or Payday, but it's still really really great. Same concept :)


What you need:

For the Filling:

  • 1/2 cup unsalted butter
  • 7 oz. marshmallow creme
  • 5 cups powdered sugar
  • 1 tsp. vanilla extract

For the Coating:

  • 2 bags (11 oz each) caramel bits
  • 2 Tbsp. unsalted butter
  • 2 cups chopped peanuts

Directions:

  1. For the Filling: Melt butter and marshmallow creme together in the microwave for 30 second increments until butter has fully melted.
  2. In a stand mixer bowl, combine melted butter and creme with powdered sugar and vanilla until blended.
  3. Form into a large ball on a nonstick surface and divide into 6 portions.
  4. Roll each of the 6 portions into 7 to 8-inch logs.
  5. Wrap each in parchment paper and freeze for 2 hours.
  6. For the Coating: Melt together caramel bits and butter in a long rectangular baking dish for 30 seconds at a time, stirring until smooth. The butter will separate from the caramel a bit.
  7. Let cool slightly then mix with hands until combined. Press into a 11x7-inch rectangle. separate into 6 equal portions.
  8. I found it easiest to make long rectangles of each caramel mixture for the next step. So it moves faster and stays easier to work with.
  9. Unwrap marshmallow logs and cover each log with one portion of the caramel, covering it completely.
  10. Roll into chopped peanuts, pressing firmly to adhere.
  11. Wrap in parchment paper and refrigerate until caramel hardens up.
  12. Slice into 1-inch pieces and serve.
