This is the perfect cookie for the pb-obsessed person in your life!
I love these cookies and I think the reason is the peanut butter chips and the honey roasted peanuts. They really make the cookie! I don't get enough recipes with peanut butter chips and I love them. The crunch of the honey roasted peanuts is the best. Plus you have bits of Reese's cups in there too with a peanut butter cookie base. It's sweet and salty, soft and crunchy. They really are the best cookies for a peanut butter lover!
What you need:
- 1/2 cup salted butter, soften to room temperature
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 3/4 cup creamy peanut butter
- 1 tsp. pure vanilla extract
- 1/2 tsp. baking soda
- 1 1/4 cups all-purpose flour
- 1/2 cup honey roasted peanuts
- 1/2 cup mini peanut butter cups
- 1/2 cup peanut butter chips
Directions:
- In a stand mixer with paddle attachment, cream together butter and sugars.
- Then add peanut butter, egg, and vanilla.
- Slowly, mix in baking soda and flour until just combined.
- Fold in peanuts, peanut butter cups, and peanut butter chips.
- Chill in refrigerator for about 30 minutes.
- Then sit at room temperature for 10 minutes before placing dough by the tablespoonful onto a parchment paper-lined or silicone mat-lined baking sheet. Gently press down.
- Bake in a preheated 350 degree oven for 8 to 9 minutes.
- Cool for a minute or 2 on the baking sheet, then remove to a wire rack to cool completely.
