Peanut Butter Lover's Cookies

This is the perfect cookie for the pb-obsessed person in your life!

I love these cookies and I think the reason is the peanut butter chips and the honey roasted peanuts. They really make the cookie! I don't get enough recipes with peanut butter chips and I love them. The crunch of the honey roasted peanuts is the best. Plus you have bits of Reese's cups in there too with a peanut butter cookie base. It's sweet and salty, soft and crunchy. They really are the best cookies for a peanut butter lover!

What you need:

  • 1/2 cup salted butter, soften to room temperature
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 3/4 cup creamy peanut butter
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. baking soda
  • 1 1/4 cups all-purpose flour
  • 1/2 cup honey roasted peanuts
  • 1/2 cup mini peanut butter cups
  • 1/2 cup peanut butter chips

Directions:

  1. In a stand mixer with paddle attachment, cream together butter and sugars.
  2. Then add peanut butter, egg, and vanilla.
  3. Slowly, mix in baking soda and flour until just combined.
  4. Fold in peanuts, peanut butter cups, and peanut butter chips.
  5. Chill in refrigerator for about 30 minutes.
  6. Then sit at room temperature for 10 minutes before placing dough by the tablespoonful onto a parchment paper-lined or silicone mat-lined baking sheet. Gently press down.
  7. Bake in a preheated 350 degree oven for 8 to 9 minutes.
  8. Cool for a minute or 2 on the baking sheet, then remove to a wire rack to cool completely.
