Upgraded Instant Ramen

There are so many ways to upgrade instant ramen and this is our favorite way!

Since the initial lockdown back in March, we've kept ramen on hand as much as humanly possible. I have 2 big kids that make their own lunch and since we're all home, leftovers get eaten quickly. Ramen is super nice to have on hand because it's so cheap and super quick. We've taken to adding tuna and hardboiled eggs and either spinach or kale if we have it too. My personal favorite tuna is the lemon pepper tuna, but spicy and sweet tuna is good too.


What you need:

  • 1/2 Tbsp. oil
  • 1 clove minced garlic
  • 1/2 tsp. fresh ginger, grated
  • 1 cup vegetable or chicken broth
  • 1 cup water
  • 1 pkg. instant ramen (discard seasoning packet)
  • A couple handfuls spinach
  • 1 hardboiled egg
  • 1 green onion, sliced
  • Sriracha
  • 1 packet tuna, if desired

Directions:

  1. Add oil with garlic and ginger to small saucepan over medium heat for 1 to 2 minutes.
  2. Add broth and water. Bring to a boil.
  3. Add ramen noodles. Boil for about 3 minutes.
  4. Remove from heat and add spinach. Stir until wilted.
  5. Transfer to a bowl and top with hardboiled egg, green onion, sriracha, and tuna.
