Easy Pork Ramen

Elevate that package of ramen with pork tenderloin, greens, ginger, and garlic!

I love this recipe because it's not necessarily a quick ramen upgrade. It's just a little bit extra effort to upgrade ramen with loads of extra flavor - no need to have that little seasoning packet! You can use preseasoned pork tenderloins or just marinate your pork yourself. Either way works. Basically this is still a pretty easy, not complicated recipe, but there are more elements to it than just dumping noodles and packet into boiling water.


What you need:

  • 1 pkg pork tenderloins (Smithfield roasted garlic and cracked black pepper if you can find it)
  • 1 tsp. salt
  • 1 Tbsp. ground black pepper
  • 3 Tbsp. olive oil
  • 4 cloves minced garlic
  • 4 cups chicken broth
  • 1 tsp. fresh grated ginger
  • 2 cloves minced garlic
  • 2 green onions, cut into large sections
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. black pepper
  • 2 Tbsp. soy sauce
  • 2 pkg. ramen noodles (discard seasoning packet)
  • Baby bok choy (spinach, kale, Napa cabbage), chopped
  • Green onions, chopped for serving
  • Hard or soft boiled eggs, sliced in half

Directions:

  1. If you have Smithfield, skip this step. Season tenderloins with salt and pepper. Mix together oil and garlic. Rub on tenderloins and place in a zipper baggie or bowl and refrigerate for at least 1 hour.
  2. Roast tenderloins in a preheated 350 degree oven for about 30 minutes or until done.
  3. Remove from oven, cover loosely, and let rest for about 10 minutes before slicing.
  4. While pork cooks, place chicken broth, ginger, 2 cloves minced garlic, 2 green onions, red pepper flakes, ground black pepper, and soy sauce in a large pot.
  5. Bring to a boil over medium-high heat and then cover and let simmer on medium low for about 15 to 20 minutes.
  6. Once pork is finished, add ramen noodles and let simmer for 3 to 5 minutes or until noodles are done. Add bok choy. 
  7. Separate ramen, bok choy, and broth into bowls. Slice pork and place some in each bowl with eggs and chopped green onions.
