Oreo Peppermint Crunch Cookies

Soft and chewy cake mix cookies with bits of Oreos and candy canes inside


These were Santa's cookies last year and survived a road trip to Florida and a few days in a really small, cramped airbnb. They almost didn't survive due to the fact that they are insanely good. They are cake mix cookies with Oreos and candy canes in them and they are the absolute best. They are chewy and crunchy and so good.


What you need:

  • 1 box white cake mix
  • 8 Tbsp. (1 stick) unsalted butter, softened
  • 1 large egg
  • 1/2 tsp. peppermint extract
  • 1/2 tsp. vanilla extract
  • 4 oz. cream cheese, softened
  • 1 cup chopped Oreo cookies
  • 1 cup Andes Peppermint Crunch pieces
  • 1/2 cup dark chocolate chips

Directions:

  1. Mix together cake mix, butter, egg, peppermint extract, vanilla extract, and cream cheese.
  2. Stir in chopped cookies, peppermint pieces, and chocolate chips.
  3. Refrigerate for 1 hour (or longer, you want the dough to not be sticky).
  4. Scoop or roll dough into 24 balls. Place on a parchment paper or silicone mat-lined pan.
  5. Bake at a preheated 350 degree oven for 10 minutes. Then remove from oven and let sit for 3 minutes before moving to a wire rack. They will look a little soft.

I love minty cookies and enjoyed these Candy Cane Crinkles because they are melt-in-your-mouth kind of cookies and sooo addictive. For a little fancy flare, these White Chocolate Peppermint Cookies from Like Mother Like Daughter are so pretty with their little dipped edges that are dunked in crushed candy canes.
