Reese's Pieces Butterscotch Cookies

Delicious soft and chewy cookies with Reese's Pieces and butterscotch chips!

I save a lot of recipes. A lot. I save ones that I want to try and ones that I think my immediate family and even onto my extended family may like because I love to make food for people. This one had Nick, my husband, written all over it. I have such a hard time keeping butterscotch chips stocked in my pantry because he loves them so much and will grab himself a quick sweet treat if they are available to him. They were definitely a wonderful cookie - I love the method of dough being built tall before it goes into the oven because having chewy centers with crunchy edges is how all cookies should be!

What you need:

  • 2 1/4 cups all purpose flour
  • 1 tsp. baking soda
  • 1 1/2 tsp. cornstarch
  • 1/2 tsp. salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, melted and slightly cooled
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp. vanilla extract
  • 3/4 cup butterscotch chips
  • 1/2 cup Reese's Pieces, plus some for the top if desired

Directions:

  1. In a stand mixer, whisk together melted butter and sugars until smooth.
  2. Whisk in egg and egg yolk, then whisk in vanilla.
  3. Add flour, baking soda, cornstarch, and salt and mix until combined.
  4. Fold in butterscotch chips and Reese's Pieces. The dough will be soft :)
  5. Cover dough and chill in the refrigerator for 3 hours or up to 3 days.
  6. Allow to sit at room temperature for about 10 minutes.
  7. On a parchment paper or silicone mat lined baking sheet, add a ball of dough that is about 3 Tbsp. worth of dough. You'll want to make it taller than wider and the warmth of your hands will help it stick together. Place 8 balls per baking sheet and add a few Reese's on top of each if desired.
  8. Bake in a preheated 325 degree oven for about 12 to 13 minutes, then allow to cool for about 10 minutes before removing to a wire rack to cool the rest of the way.

Another wonderful recipe for any fan of peanut butter is the Peanut Butter Lovers Cookies recipe - peanut butter cookie with honey roasted peanuts, peanut butter chips, and Reese's cups. I haven't seen any other cookie that uses Reese's cereal but Picky Palate is onto something with this Reese's Puffs Chocolate Chip Cookies recipe.
