Hoisin Stir Fry Bowls

This stir fry bowl has loads of flavor and a spicy peanut sauce to finish it off!

Stir frys are the perfect quick meal. They have so much flavor and you can put so many veggies in them. My oldest in particular probably likes stir frys more than other Asian style cuisine simply because the veggies maintain their crunch and he doesn't like when veggies get soft and mushy. I adore this particular stir fry for it's peanut butter sauce and chopped peanuts topping. I don't know why but I love all of these style recipes with peanut sauces and crunchy peanuts or cashews on them. There is so much savory goodness with those additions!

What you need:

For the Spicy Peanut Sauce:

  • 1/4 cup creamy peanut butter
  • 1 Tbsp. sriracha
  • 1 tsp. soy sauce
  • 1 tsp. grated fresh ginger
  • 1 tsp. brown sugar
  • 3 Tbsp. hot water

For the Turkey & Vegetable Mix:

  • 1 Tbsp. vegetable oil
  • 4 cloves minced garlic
  • 2 tsp. grated fresh ginger
  • 1 lb. ground turkey
  • 2 large carrots, grated
  • 2 red bell peppers, finely diced
  • 2/3 cup hoisin sauce
  • 2 Tbsp. soy sauce
  • 2 tsp. vegetable oil

For the Bowls:

  • 4 cups cooked brown rice
  • 1/4 cup peanuts, chopped
  • 3 green onions, sliced

Directions:

  1. For the Spicy Peanut Sauce: In a small bowl, combine all ingredients except for the water. Add hot water a tablespoon at a time until sauce is thin enough to drizzle. I found that I had to add more later after it had sat, right before serving. Set aside.
  2. In a large skillet, heat 1 Tbsp. vegetable oil over medium heat. Cook garlic and ginger for about 1 minute.
  3. Add ground turkey and crumble while it browns.
  4. Add carrot, bell pepper, hoisin sauce, soy sauce, and 2 tsp. vegetable oil to skillet. Stir and cook until everything has heated through.
  5. Build bowls with a good helping of rice, then meat and veggie mixture, drizzle with peanut sauce, and top off with chopped green onions and peanuts.
