Cheesy Kielbasa, Rice, and Broccoli Skillet

Extra cheesy one pot skillet meal that is so easy to throw together and is a crowd pleaser!

I think it's wild that I didn't like kielbasa years ago. It's one of my favorite things. I typically will buy turkey sausage and I'm not sure if that counts for kielbasa but I do like both. I really loved how easy this recipe was - it really reminded me of something I would have made when I was first married. I made a lot of easy skillet meals or casseroles and this was very much that.

What you need:

  • 1/2 Tbsp. olive oil
  • 1 to 2 pkg. kielbasa, sliced
  • 1 small onion, diced
  • 1 small green bell pepper, diced
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 2 cloves minced garlic
  • 1 cup white rice, uncooked
  • 2 cups chicken broth
  • 2 cups broccoli florets
  • 2 cups shredded cheddar cheese

Directions:

  1. In a large skillet, heat oil over medium heat. Add kielbasa and brown on each side. Remove from pan with a slotted spoon.
  2. Add onion and bell pepper and cook until onion is translucent. Add garlic and cook for 1 more minute. Season with salt and pepper.
  3. Stir rice in and continue stirring while cooking for about 2 minutes.
  4. Add chicken broth and bring to a boil. Reduce heat to low. Cover and cook for about 15 minutes.
  5. Add broccoli on top of rice without stirring and cover. Cook for 5 to 7 more minutes or until rice is tender.
  6. Stir in kielbasa and 1 cup of cheese. Then top with remaining 1 cup of cheese. Cover and let sit for about 3 minutes or until cheese melts.
