Peach Crumble Waffles

Dessert for breakfast with fluffy waffles, peach pie topping, and a cinnamon oat crumble.

Over the years, I've made many different kinds of waffles - some of them were ones that I would all of a sudden be craving but had never had before. That is how these Peach Crumble Waffles were born. I was like, I want streusel on a waffle. I think I originally had set out to make blackberry crumble waffles but could not find any blackberry pie filling. I still would love to make it eventually. Basically, you could do any flavor of pie filling you can find: apple, cherry, blueberry, etc. Nick loves peaches though, so this ended up being a really good alternative to blackberries.

What you need:

For the waffles:

  • 2 cups Bisquick pancake mix
  • 2/3 cup Greek yogurt
  • 1 tsp. vanilla
  • 1 1/3 cups milk
  • 2 Tbsp. vegetable oil
  • 1 tsp. cinnamon

For the oat crumble:

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter, at room temperature, cut into pieces
  • 3/4 cup oats

For serving:

  • Peach pie filling
  • Whipped cream
  • Cinnamon

Directions:

  1. For the waffles: Whisk together all the ingredients and set aside while waffle iron preheats.
  2. For the oat crumble: Whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. Add butter and mix with hands until pea-size lumps form.
  4. Add oats and mix until clumps form. Chill for about 15 minutes.
  5. Pour onto a parchment paper-lined baking sheet.
  6. Bake in a preheated 375 degree oven for 8 minutes.
  7. Stir and toss to crumble, then bake another 8 minutes until golden brown, stirring to crumble again. Then let cool.
  8. Bake waffles in waffle iron until golden brown.
  9. Serve waffles topped with peach pie filling, oat crumble, whipped cream, and a sprinkle of cinnamon.
