What you need:
Donuts:
- 1/2 cup butter
- 1 egg
- 1/2 tsp. salt
- 1/2 tsp. vanilla
- 2/3 cup brown sugar
- 2/3 cup vanilla yogurt
- 2/3 cup crushed pineapple, drained (save the juice!)
- 2/3 cup shredded carrots
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 2 cups flour
- 4 oz. cream cheese
- 4 tbsp. butter
- 2 tbsp. reserved pineapple juice
- 3/4 cup powdered sugar
- Chopped walnuts
- For the donuts: Cream butter, sugar, and salt together.
- Add egg, vanilla, and yogurt.
- Stir in pineapple and carrots.
- In a separate bowl, mix together the dry ingredients.
- Slowly add dry to wet.
- Fill a greased donut pan.
- Bake at 375* for 10 minutes.
- For frosting, beat cream cheese, butter, and juice together. Add powdered sugar.
- Dip cool donuts in and top with chopped walnuts.
