Spicy Bean Rollups

These are from a cool site called Behind the Bites. Justin Gilbert has a unique spin on food blogging by using information graphics for his recipes. This one happened to have been a Star Wars themed post. They were crunchy and cheesy and just a little on the spicy side.

What you need:
  • Corn tortillas and/or egg roll wrappers**
  • Bean Dip
  • 1 can green chillies
  • Pepperjack cheese sticks
  • Oil for frying
Directions:
  1. Heat oil to 350 to 375*
  2. Spread bean dip onto corn tortilla. Add a little green chillies down the center. Place a cheesestick on top. Fold in sides and roll up.
  3. Fry and then set on a paper towel-lined plate.


**I also wrapped mine in the egg roll wrappers because I have horrible luck with corn tortillas and they were falling all apart in the oil. I might try JUST egg roll wrappers next time. I'm not sure though. They were really good with both.
