Instead of my "normal" Fantastical Friday, I decided I needed to share a recipe. Then I got everything ready and left my computer before hitting publish. Whoops. As I spoke about briefly last Friday, I'm not doing so hot on blogging. But now that the kids are out of school (yesterday was their last day), I'm hoping to get back to a regular posting schedule.

This recipe is one I hope to make at least twice this summer. I don't typically get ribs out at restaurants or eat them even on occasion, but since trying them out at home, I've been craving them like no other. I was certain I would mess them up somehow or they wouldn't be that good, but the exact opposite happened. They turned out wonderfully. The mix of the two bottles of barbecue sauce was perfection and the meat was tender and fell off the bone. I especially loved the broiling at the end that gave some crispy edges to the meat :) If you ever have plans to grill out and then it's raining and pouring, this is a great alternative to still have that good grilled grub!

What you need:
  • 3 Tbsp. paprika
  • 2 Tbsp. brown sugar
  • 1/4 tsp. cayenne
  • 1 Tbsp. salt
  • 1 Tbsp. pepper
  • 6 lbs baby back ribs
  • 3 cups barbecue sauce [I used a combo of hickory smoke and honey bbq]
  • Cooking spray
Directions:
  1. Mix together spices and rub on ribs.
  2. Place the ribs in your slow cooker so that the meat side is touching the sides of the bowl.
  3. Pour bbq sauce on top and cover. Cook on low for 6 to 8 hours.
  4. Prepare your broiler pan with aluminum foil and cooking spray. Remove ribs and place meat side down.
  5. Pour some of the liquid from the slow cooker into a small saucepan. Simmer for about 15 minutes or until thickened. Salt and pepper to taste.
  6. Brush ribs with sauce and broil for 2 to 4 minutes.
  7. Flip the ribs and brush with more sauce. Broil that side for about 10 minutes, coating with more sauce about 3 more times.
  8. Remove from oven. Tent with foil and let rest for 10 minutes.
