Creamy Spinach & Sausage Pasta

This simple pasta recipe is ready in under 20 minutes and not only does it have spinach and sausage, but a little kick to it too!

I'm always so impressed with the Monday pasta recipes I make. I can't remember the last time I didn't like a recipe that was a Monday dish. If you've caught on to my pattern for meal plans, I go back and forth between red meat and chicken (fairly consistent with it), I have one free day/leftover day, and there are some themes for each day of the week. Mondays are pasta recipes because they are quick. For those interested, Tuesdays are Mexican food, Wednesdays are soup/stew/chili recipes, Thursdays are throwbacks or Asian food, Fridays alternate pizza and burgers, and weekends are recipes that take a little longer to make.

This pasta recipe is simple and has a kick. I can't believe as a kid I refused to eat kielbasa or smoked sausage because it's one of my favorite proteins as an adult. I love it!

What you need:
  • Smoked sausage, sliced
  • 1 Tbsp. olive oil
  • 1 medium onion, diced
  • 1 can (14 oz.) diced tomatoes with chillies
  • 2 cups chicken broth
  • 8 oz. pasta
  • 3 cups fresh spinach
  • 1 cup shredded monterey jack cheese
  • Green onions, diced, for serving
Directions:
  1. Add olive oil to a large deep skillet. Add sausage and saute over medium heat for about 5 minutes.
  2. Add onion to skillet and cook for another 5 minutes. 
  3. Add tomatoes and chicken broth and stir to combine. Scrape off any brown bits from the bottom of the pan.
  4. Add uncooked pasta to skillet and make sure it is under the liquid completely. 
  5. Cover and bring to a boil. Once boiling, reduce heat to low and cook for about 10 minutes or until pasta is tender. Make sure you stir on occasion to prevent sticking.
  6. Stir in spinach, 1 cup at a time, until wilted.
  7. Turn of heat and top with shredded cheese and cover to melt.
  8. Top with green onions and serve immediately.
