Cheeseburger Salad with Animal Sauce Dressing

This salad is a lower carb version of the In-N-Out Cheeseburger with Animal Sauce!

In 2020, I don't really have a lot of resolutions. I'm not a resolutions type of gal. However, I am continuing my slight change in diet and I want to eat more salads in the new year. I love love love salads, but I got a few complaints from the others about salad for dinner. I think they have come around a little because of recipes like this that are a little hardier than a regular salad. I thought this one was really fun with the slider-like mini burgers. The animal sauce dressing really brings the whole thing together. We added bacon bits to the recipe because why not?!

What you need:
For the animal sauce dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1 Tbsp. extra virgin olive oil
  • 1 Tbsp. dill relish
  • 1/2 Tbsp. apple cider vinegar
  • 1/2 tsp. granulated sugar
  • 1/4 tsp. salt
  • Pinch of ground black pepper
For the salad:
  • 1 lb. ground beef
  • 1/2 tsp. seasoning salt
  • 1 Tbsp. cooking oil
  • 2 hearts romaine lettuce
  • 1/4 red onion, diced
  • 2 to 3 roma tomatoes, diced
  • Shredded cheddar cheese
  • Bacon bits
Directions:
  1. For the animal sauce dressing: Stir together all ingredients and refrigerate while you prep the salad.
  2. For the salad: Rinse lettuce and drain. Chop and set aside.
  3. In a bowl, mix together ground beef with seasoning salt.
  4. Divide ground beef into 4 portions. Then divide each of those into 4 portions and shape into little burger patties.
  5. Heat a little oil in a skillet over medium heat.
  6. Cook patties until browned on each side and cooked through.
  7. Build salads by dividing lettuce between 4 plates or bowls. Sprinkle with onions and cheddar cheese. Then top with tomatoes and 4 burger patties for each serving. Drizzle with dressing and bacon bits and serve!
