Sausage and Parmesan Garlic Linguine

This one pot pasta dish can be made with or without the sausage and is mouthwateringly delicious!


I had this recipe saved for a while and wanted to make it, but as I've said before I have some complainers for meatless nights. So I did end up throwing a little Italian sausage into the mix to make everyone happy. It was really so easy and I could make this most times (meatless) whenever I wanted because I pretty much always have the ingredients on hand.

What you need:
  • 1 lb. Italian sausage
  • 2 Tbsp. unsalted butter
  • 4 cloves minced garlic
  • 2 cups chicken broth
  • 1 cup milk, plus some if needed
  • 8 oz. fettuccine
  • Salt and pepper, to taste
  • 1/4 cup shredded Parmesan cheese
  • 2 Tbsp. chopped parsley
Directions:
  1. In a large, deep skillet, cook and crumble Italian sausage. Drain and set aside.
  2. Melt butter in same skillet over medium high heat. Add garlic and cook for 1 to 2 minutes or until fragrant.
  3. Add chicken broth, milk, and fettuccine. Season with salt and pepper.
  4. Bring to a boil, then reduce heat to low and simmer until pasta is cooked all the way, about 18 to 20 minutes. Stir occasionally.
  5. Once pasta is cooked, add Parmesan and cooked sausage and stir. If it is too thick, add a little more milk.
  6. Serve topped with parsley.
