Sausage, Brussels, and Parmesan Pasta

This sausage and parmesan pasta is the perfect dish to ease someone into eating brussels sprouts!

I'm trying to convince my husband and kids that brussels are the bomb dot com. It's going okay. They definitely prefer them shredded rather than whole. They really enjoyed this dish with brussels and I can't complain at all. I love pasta, so I'm up for eating pasta with my brussels if that's the way I can get them! This is also a relatively quick dish (as a lot of pasta dishes I make are) and that, of course, is a huge plus with 5 people with different things going on on any given day.

What you need:
  • 1 lb. spaghetti
  • 1 lb. sweet Italian sausage
  • 4 Tbsp. EVOO, plus some
  • 12 oz. shredded brussels sprouts
  • Salt and pepper
  • 1/4 tsp. red pepper flakes
  • 6 cloves minced garlic
  • 1 1/2 cups Parmesan cheese
Directions:
  1. Heat a drizzle of EVOO in a large skillet over medium heat. Add sausage and brown and crumble. Then set aside.
  2. Heat 2 Tbsp. EVOO in the skillet and add brussels and red pepper flakes, salt, and pepper (to taste), and saute for 3 to 4 minutes.
  3. Add garlic and saute for 1 minute more.
  4. Menawhile, cook pasta in salted boiling water until slightly under al dente. Do not drain.
  5. Use tongs to move spaghetti to skillet.
  6. Add Parmesan cheese and sausage. Drizzle with EVOO and add enough pasta water for the cheese to melt and coat the pasta evenly.
  7. Season with salt and pepper and serve.

Another one of my favorite, quick pasta dishes is Pesto Spaghetti Carbonara - anything with pesto is going to be on my favorites list and this is no exception! For more shredded brussels, which again I think are easier to get someone who doesn't like them or has never tried them, more accustomed to the bitter-like taste in smaller portions, this Brussels Sprouts Caesar Chicken Salad from Stuck on Sweet looks phenomenal.
