Strawberry Lemon Snack Cake

Sweet and sour and absolutely perfect for a snack or a little treat after dinner!


I have been trying for years to get behind lemon sweets and so far, to date, it has failed. I just don't like purely lemon desserts. Now throw a berry in there and I love it. I knew I would enjoy this dessert because strawberry is my favorite berry with lemon. I loved the consistency of the cake. It sort of reminds me of a cobbler in some ways. The lemon was just in the glaze although it would be great with a little lemon zest in the batter, in my opinion.

What you need:
  • 1 cup unsalted butter, at room temperature
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1 1/2 cups strawberry pie filling
  • 1 1/4 cups powdered sugar
  • 2 Tbsp. lemon juice
Directions:
  1. Beat butter and sugar until creamy.
  2. Then add eggs and beat until combined.
  3. Add flour, salt, and baking powder and mix until just combined.
  4. Remove and reserve 1 cup batter.
  5. Spread the remaining batter evenly on a foil-lined 15x10-inch baking sheet that has been sprayed with nonstick spray.
  6. Top with pie filling leaving an inch around the edges.
  7. Drop small spoonfuls of the reserved 1 cup batter on the top of the pie filling.
  8. Bake in a preheated 350 degree oven for 22 to 25 minutes.
  9. Remove from oven and let cool.
  10. Whisk together powdered sugar and lemon juice in a small bowl.
  11. Drizzle on top and let set before cutting and serving.
