Sweet and sour and absolutely perfect for a snack or a little treat after dinner!
I have been trying for years to get behind lemon sweets and so far, to date, it has failed. I just don't like purely lemon desserts. Now throw a berry in there and I love it. I knew I would enjoy this dessert because strawberry is my favorite berry with lemon. I loved the consistency of the cake. It sort of reminds me of a cobbler in some ways. The lemon was just in the glaze although it would be great with a little lemon zest in the batter, in my opinion.

What you need:
- 1 cup unsalted butter, at room temperature
- 1 3/4 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 tsp. salt
- 1 1/2 tsp. baking powder
- 1 1/2 cups strawberry pie filling
- 1 1/4 cups powdered sugar
- 2 Tbsp. lemon juice
- Beat butter and sugar until creamy.
- Then add eggs and beat until combined.
- Add flour, salt, and baking powder and mix until just combined.
- Remove and reserve 1 cup batter.
- Spread the remaining batter evenly on a foil-lined 15x10-inch baking sheet that has been sprayed with nonstick spray.
- Top with pie filling leaving an inch around the edges.
- Drop small spoonfuls of the reserved 1 cup batter on the top of the pie filling.
- Bake in a preheated 350 degree oven for 22 to 25 minutes.
- Remove from oven and let cool.
- Whisk together powdered sugar and lemon juice in a small bowl.
- Drizzle on top and let set before cutting and serving.
