This recipe takes a few ingredients and easy prep to go into the oven and bake - it's so easy and turns out super delicious!
I loved this recipe a whole lot but admittedly haven't been able to eat it again because the chicken is coated in mayonnaise before it's dipped in the panko/Ritz cracker mixture and Nick will not eat anything with mayonnaise. Even though you do not get any of the flavor with the coating. I particularly loved how crunchy and flavorful the breading is with the panko and Ritz mixture. I remember a lot of homestyle good ol' meals that had Ritz cracker crumbled on top and so this is very nostalgic, but with a hint of something new with the sriracha.
What you need:
- 4-6 thinner boneless, skinless chicken breasts
- Salt and pepper
- 1/2 cup mayonnaise
- 1/4 cup shredded cheddar cheese
- 2 tsp. sriracha
- 1 cup panko
- 1 cup crushed Ritz crackers
Directions:
- Season chicken with salt and pepper on both sides.
- In a bowl, mix together mayonnaise, cheese, and sriracha.
- In a separate bowl, mix together panko and crackers.
- Dip each piece of chicken into the mayonnaise mix first, then into the panko mix pressing gently to adhere the breading to the chicken.
- Place on a foil lined baking sheet and sprinkle with any remaining panko.
- Bake in a preheated 425 degree oven for 30 to 40 minutes or until cooked through.
I was late to sriracha but I have lots of recipes saved including this recipe from An Affair From the Heart for Honey Sriracha Wings. No sriracha, but another baked chicken recipe that I enjoy immensely and recommend and that is this recipe for Broccoli Stuffed Chicken.
Crispy Sriracha Cheesy Chicken Bake
Ingredients:
