Salted Caramel Muffins

Sweet dense little muffins with a salted dulce de leche swirl and caramel bits on top!


This is one of the breakfast recipes I had on my monthly meal plan for years. I know that sounds crazy but I really hate making breakfast recipes and so I stopped trying to do three a week. I tried 2 a week and it still wasn't working. Now I only plan one a week and most weeks, I don't make it *awkward shrug* I am not a morning person and sometimes I get too wrapped up in things to make a breakfast recipe for the next day. I like muffins because they are quick to throw together and if I manage to not make too much of a mess in the muffin tin, fairly easily clean up versus making pancakes or waffles or donuts. I loved the salty caramel in this SO much.
What you need:
  • 2 cups all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • 1/3 cup milk
  • 1/2 cup dulce de leche
  • 1/4 tsp. kosher salt
  • Caramel bits
Directions:
  1. Mix together flour, baking powder, and salt in a small bowl. Set aside.
  2. In a stand mixer, beat together butter and sugar until light and fluffy.
  3. Add eggs and vanilla and mix until just combined.
  4. In alternating batches, add flour mixture and milk.
  5. In the small bowl you used for the flour mixture, mix dulce de leche and kosher salt together.
  6. Swirl into the batter. Then divided into 12 paper-lined muffin cups. Top with caramel bits.
  7. Bake in a preheated 350 degree oven for 20 to 25 minutes.
