Turkey Taco Salad + Meal Prep Instructions

This is a great and healthy taco dish that is perfect for meal prepping into 6 ready-to-go portions!

I just want to start out by saying this actually supposed to be a meal prep food. However, in 2020, there was absolutely no reason for me to meal prep. I'm going to leave the instructions on how to do this for meal prepping if that is something you are looking for. We ended up just having this for dinner and it was fantastic. I have spoken here and there about how we are making the switch to subbing turkey for red meat here and there to help with my borderline high cholesterol (hereditary - yay!).

What you need:

  • 1 Tbsp. olive oil
  • 1 1/2 lb. ground turkey
  • 1 pkg. taco seasoning mix
  • 6 cups shredded romaine lettuce
  • 1/2 cup pico de gallo
  • 6 Tbsp. Greek yogurt
  • 6 Tbsp. shredded Mexican blend cheese
  • 1 lime, cut into wedges

Directions:

  1. Heat olive oil in a large skillet over medium-high heat. Add turkey and cook until browned, crumbling as you go.
  2. Add taco seasoning and water and simmer for 3 to 5 minutes.
  3. For serving: Build your bowl with lettuce, taco meat, pico, a tablespoon each of Greek yogurt and cheese, and lime wedges.
  4. For meal prepping 6 servings: Divide lettuce into zipper baggies. Divide pico de gallo, Greek yogurt, and cheese into small plastic condiment cups with lids. Divide turkey and lime wedges between 6 containers and then place packaged ingredients with each container.
