Easy Shepherd's Pie

Have leftover mashed potatoes? Make this quick shepherd's pie!

I was a little surprised that taco seasoning was one of the ingredients for this shepherd's pie, but look, I've learned by now not to knock something until I try it. It turned out so well and while it does have an element of taconess to it, it still tastes like a shepherd's pie and really delicious. I love that there is an option for using leftover mashed potatoes because I often have them. I mean honestly this would be perfect for a dish after having tacos AND a big dinner with mashed potatoes. I think leftover taco meat would be super great in this and then you get to skip a few more steps. :)

What you need:

  • 1 1/2 lb. ground beef or turkey
  • 2 tsp. dried minced onion
  • 1/2 tsp. minced garlic
  • 1/2 cup water
  • 1 envelope taco seasoning
  • 1 cup frozen mixed vegetables
  • 2 cups shredded cheddar cheese, divided
  • 3 cups mashed potatoes (leftovers, store bought, homemade)

Directions:

  1. Cook and crumble ground meat with onion and garlic over medium heat. Drain if needed and return to skillet.
  2. Add water, taco seasoning, and mixed vegetables. Heat for 3 to 4 minutes.
  3. Add 1 cup cheese and stir. Remove from heat.
  4. In a bowl, mix together mashed potatoes with remaining 1 cup cheese.
  5. If your skillet is ovenproof, spread potatoes on top. If not, remove meat to a greased casserole dish and top with potatoes.
  6. Broil on medium for 4 to 6 minutes or until potatoes are slightly golden.

Another one of my favorite quick but tastes like it was cooked for way longer dishes is this Weeknight Spaghetti Bolognese recipe. I don't know about you, but I'm all about green bean casserole during the holidays and I love the idea of this Green Bean Casserole Shepherd's Pie from Mostly Homemade Mom.
