This quick pasta dish has homemade alfredo and crisp broccoli with some yummy bacon in there too.
This March is flying by compared to last March and it's crazy. I remember making this meal last year and being grateful that the bacon wasn't being overpicked and I was able to find some broccoli and pasta. I appreciate this recipe with how quick it is. I find a lot of pasta recipes that are able to be made in under 30 minutes - maybe that's why I like pasta so much! I also like this recipe because it's lite on meat, but you could absolutely add some chicken to it if you wanted.
What you need:
- 1 lb. penne pasta
- 2 cups chopped broccoli florets
- 5 slices bacon, diced
- 1/2 cup unsalted butter
- 1 cup heavy cream
- 1 1/2 cups shredded Parmesan cheese
- 1/2 tsp. garlic powder
- Salt and pepper
Directions:
- Cook pasta according to package directions in salted boiling water. Drain and place into a large bowl.
- Meanwhile, cook bacon in a skillet until crispy. Remove from skillet onto a paper towel lined plate. Remove all but 1 Tbsp. bacon grease from skillet.
- Add broccoli to skillet with bacon grease and cook for about 5 minutes.
- In a small saucepan, add butter and heavy cream. Cook until butter has melted.
- Add Parmesan, garlic powder, salt, and pepper and stir until cheese has melted and the sauce is smooth and creamy.
- Add bacon and broccoli with pasta in a large bowl. Pour sauce over the top and stir until combined.
