Penne Alfredo with Broccoli and Bacon

This quick pasta dish has homemade alfredo and crisp broccoli with some yummy bacon in there too.

This March is flying by compared to last March and it's crazy. I remember making this meal last year and being grateful that the bacon wasn't being overpicked and I was able to find some broccoli and pasta. I appreciate this recipe with how quick it is. I find a lot of pasta recipes that are able to be made in under 30 minutes - maybe that's why I like pasta so much! I also like this recipe because it's lite on meat, but you could absolutely add some chicken to it if you wanted.


What you need:

  • 1 lb. penne pasta
  • 2 cups chopped broccoli florets
  • 5 slices bacon, diced
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1 1/2 cups shredded Parmesan cheese
  • 1/2 tsp. garlic powder
  • Salt and pepper

Directions:

  1. Cook pasta according to package directions in salted boiling water. Drain and place into a large bowl.
  2. Meanwhile, cook bacon in a skillet until crispy. Remove from skillet onto a paper towel lined plate. Remove all but 1 Tbsp. bacon grease from skillet.
  3. Add broccoli to skillet with bacon grease and cook for about 5 minutes.
  4. In a small saucepan, add butter and heavy cream. Cook until butter has melted.
  5. Add Parmesan, garlic powder, salt, and pepper and stir until cheese has melted and the sauce is smooth and creamy.
  6. Add bacon and broccoli with pasta in a large bowl. Pour sauce over the top and stir until combined.
