I have been meaning to try the Test Kitchen chocolate chip cookies for so long and I finally got around to it. Dare I say, I liked them more than Alton's Chewy and I'm not 100% if I like these or the Tollhouse kind better because they are so different. Sometimes I want a super melty fall-apart cookie that reminds me of my childhood and sometimes I want a heartier, but still delicious chocolate chip cookie like this one. I rarely add walnuts to my cookies, but I had to with these.

I love fresh pineapple in savory dishes and was totally in love with the idea of teriyaki chicken and zucchini with it. I was overall looking forward to these grilled Hawaiian teriyaki bowls. The only thing I was not sure about was the coconut rice. I quickly discovered how incredible it was and honestly I could eat it by itself. I am making a few recipes in July that need rice and I'm definitely making this coconut jasmine rice. The homemade teriyaki was fabulous too.

Last June, I was tasked with making the cake for my sister-in-law's wedding. I wanted to practice rosettes and decorating before hand...because even though it was a rustic theme and it didn't need to be completely smooth and perfect, I wanted it to be pretty. My kitchen was warm and the frosting was melting by the time I got to my rosettes, but I still was very happy with how it turned out. I added little stars around the top of the cake and in between any gaps and even though it was kind of cheating, I think it looked gorgeous in the end.

The cake itself was wonderfully flavorful, such a classic taste to it. The sugary buttercream was by far the best part and that is coming from someone who really doesn't care for a ton of frosting on my cake or cupcakes.

Fantastical Friday: Meet Archer


I usually share food stuff on Fridays, but today is a post about our new pet. My About Me page has my pets listed and pictured because, of course, I love them so much. Over the past few weeks, the local shelters have been posting about cats and kittens and it's been breaking my heart. I have always wanted to foster pets but I don't think it would really work with the pets we have now. Saydee is very submissive and we tried to foster (to possibly adopt) a puppy and it didn't work. She wouldn't eat and then the puppy would eat her food. It was a bit of a disaster. I don't think fostering kittens would be smart right now with Mason being crazy and climbing everything -- and I'm not sure how our cats would react to more than one new cat being thrown into the bunch.

Plus Nick was not interested in getting any more animals right now. He knows if he didn't reel me in, I'd probably have 20 cats by now. I grew up with a dog and loved him dearly, but I am definitely a cat person. Not that I hate dogs, but I prefer cats. I guess I had worn Nick down with all the cuteness in the cat and kitten posts I had shared from our local shelter because while I was making dinner, he asked if I wanted to take the kids and go get one. I didn't know if he was messing around and gave him my best Sasha Valour "Don't joke about that" impression.

He wasn't joking and we ended up driving to one of the pet stores (the shelter was working with) to see their adoptable animals. I have no problems adopting an adult pet. Bella and Muffin, our two cats, were both over a year old when we adopted them. But we knew with having the dog and two cats, a kitten was probably the better choice. We were checking out three different boy kittens, two from the same litter and a little orange one. In the end, we chose "Bobby Socks" because he was very friendly and sweet.


He is a 2 month old American shorthair that we named Archer Mallory Sterling. He's the cutest little dude ever. I'm hoping he may be part Maine Coon because of the little tufts on the tips of his ears. He adjusted really well to the house and has been eating, drinking, and using the litterbox like a pro. Archer is a little weary of Mason if he is being really crazy right next to him and he doesn't know what to think of the other three animals. Saydee is really excited about him and I think they will be best friends eventually. Bella is more or less neutral to the situation. She has been treating him like a typical little brother and growls or hisses if he is being too rowdy right next to her. Muffin is...well, being Muffin. She is not happy about him and has been reeeeally not happy if he comes near her. We've been keeping them more-or-less separated for a majority of the time to ease them into a good relationship. If you all have any tips or tricks for reinforcing positive interactions between an old cat and a new cat, I'd love to hear them!

The transition from 3 animals to 4 has been way smoother than I could have expected and I'm hoping the other two cats will warm up to Archer here in the next few weeks and that Archer will warm up to Saydee as he gets older because Saydee just wants to love him and be his best friend.

Tomato, mozzarella, and basil have been a very present combination in my diet lately. And they sure did make for a delicious omelet! In December, my husband and I celebrated our 10th wedding anniversary and he got me an AeroGarden as a gift. I have had problems with the chipmunks eating my plants, so I was so incredibly excited that he got me one. I never would have purchased one for myself. The first set of pods I planted in my AeroGarden was a herb variety that included two basils (that are still going strong on my porch out of the AeroGarden), parsley, chives, cilantro, and dill. I just started a salsa set of pods, but I was so excited the basils did so well and have continued to grow because basil is my favorite. It has made me want to make all the fresh basil recipes I can.

I was assigned Our Eating Habits for Secret Recipe Club at some point and had saved this recipe to try at some point, even though I didn't pick it for reveal day. My basil was going crazy and I remembered I had a caprese-style omelet that I could make and all the ingredients to make it. So voila! It was delicious. So so delicious!

Happy National Peaches & Cream Day! We are celebrating today with a PEACHES AND CREAM food fight. All the recipes will contain peaches and cream. I can't wait to see what other goodies are linked up and y'all can find that at the end of this post.

I chose this breakfast recipe because I've been wanting to make oatmeal lately and kept forgetting to and eating a bagel or English muffin before realizing I wanted oatmeal. I was a bit miffed that the recipe takes 3 to 5 hours because I am not morning person and I sure as heck ain't waking up at 3 am to fix breakfast. However, I did make it and ate it for snack and it was wonderful. Just as wonderful as I knew it would be.

It also is just fine reheated in the microwave, which I ended up doing for the two mornings that followed. This was my first experience with steel cut oats and I was really intrigued by how much they reminded me of tapioca. In fact, this recipe reminded me of a flavored tapioca and I think that made me love it even more. I served my oatmeal up with half-and-half.

I have never been lucky enough to visit an In-N-Out. The closest one is in Texas...probably a good 15 hours away. It pains me to see all the burgers from people on the West Coast eating all those delicious In-N-Out burgers. The best I can get is a copycat recipe and I will gladly take that. I am a huge fan of copycat recipes :)

This is the In-N-Out Double Double. It is a double cheeseburger with two patties, two slices of American cheese, onion, lettuce, tomato, and animal sauce (similar to fry sauce, if you're familiar with that). The onion can be sliced or grilled. This recipe called for caramelizing - my favorite! I personally love a simple burger seasoned with salt and pepper and cooked in a cast iron skillet. Then the combination of the rest of the ingredients with the burger make for such a flavorful, juicy meal!

Today's Sunday Supper Movement event is all for the dads: FATHER'S DAY MENU IDEAS. The event is hosted by of. I picked out a recipe that I recently made that my husband loved and I think most dads would enjoy: Korean BBQ Steak Bowls.

I have never made any Korean food or anything that closely resembles it. Nor have I ever had any Korean food, but I figured we would give it a go and see what happened. Everyone was instantly excited about it because we are all - yes, all of us, myself, Nick, the big kids, and the toddler - obsessed with Korean pop music right now. The big kids wanted to listen to kpop while we ate the Korean style food. According to Wiki (fingers crossed that it's correct), this version of Korean bbq is Bulgogi because it is beef sirloin. Beef tenderloin is also bulgogi.

I was intrigued by the ingredients of the marinade/dressing and was also a little nervous because we had a few new ingredients that I had never used or tasted. But in the end, Kroger came through and had mirin and spicy chili paste and the recipe turned out wonderfully. The marinade was sweet and spicy and garlicky. Simply wonderful. I really enjoyed having the meat atop some veggies. The Wiki article also said it can be served over a green onion salad, over lettuce with cucumbers and peppers, or even in lettuce as a wrap!

This Hobo is loosely based on the Greek Hobo from a place called Voula's Offshore Cafe in Seattle. Voula's Hobo has in-house made Greek country sausage, onions, mushrooms, and roasted red peppers topped with feta cheese. I have never had Greek sausage, but would love to try it and see what the difference is between the American country sausage and the Greek sausage. I also did not look up what Voula's did for their hobo, but now that I know, I definitely would love to make a version closer to theirs! Roasted red peppers and feta?! Yum! This recipe came from one of my Triple D cookbooks and it's a great scramble despite not being closer to the Voula's.

Years ago, I had my first snickerdoodle and I realized what a huge mistake I had made skipping over them for another favorite kind of cookie for my whole life. I am snickerdoodle-obsessed now and have been testing out many a snickerdoodle recipe, whether it be cookies, bars, cakes, breakfast recipes, etc. I was looking forward to making this Snickerdoodle Cake and was not disappointed at all. It was a wonderful cake with lots of cinnamon flavor and the frosting was incredible.

One pot meals that are ready in under 30 minutes are my jam! I particularly love this one because it's got pasta, ground beef, tomatoes, and spinach...so it's pretty close to tasting like spaghetti, but it's not spaghetti. Don't get me wrong, I love spaghetti, but I also like variety. I don't like having one thing too much because I would hate to be sick of a favorite meal. Not pictured is the Parmesan cheese...I nearly forgot it until we had sat down and Nick said "Is there supposed to be cheese on this?". Oops!

This week is more new recipes than ones I've already had and I'm pretty excited about all of them. I'm still working on figuring out this whole sourdough thing. There is so much conflicting information out there! I store mine in the refrigerator because I don't use it very often, but I don't know how often I should stir or feed it or how to feed it. Some people say just add flour and water (1 cup of each) then there's other people that say remove 1/4 cup starter, discard the rest, and feed with 1/4 cup water and a scant 1/2 cup flour. Blargh.

Today's Sunday Supper Movement event is KID FRIENDLY VEGETABLE RECIPES and is hosted by Anne of Simple and Savory. I am thankful that my big kids love vegetables, so I've never really had to hide vegetables in food. My youngest is currently in his beige food stage, but I have high hopes that he will also love vegetables as much as the rest of us do. I really attribute the big kids being so open to vegetables because Nick and I eat basically every vegetable there is.

I think both of the big kids love broccoli the most and love when I fix shells and cheese with broccoli added to it. I know a lot of kids will eat vegetables if they have cheese on it, so this recipe is really good for picky eaters too. I personally think you could adjust the amount of broccoli if it makes your picky eaters side eye all the green, but we love lots and lots of broccoli, so we needed it all! I am really excited to see what my fellow Sunday Supper bloggers have to share because I put veggies in everything!

When I was little, egg burritos were one of my favorite things my mom would make for brinner. I knew I would love these breakfast quesadillas the second I looked at the recipe. Inside the quesadillas, you will find bacon, scrambled eggs, bell pepper, jalapeno, and cheese. But I find that paired with salsa and sour cream really made the whole recipe complete. I don't make quesadillas using 2 tortillas anymore because I have never been able to flip a full quesadilla ever. So this recipe makes 6 quesadillas and can feed 6 people.

I love making cake for birthdays and pride myself on trying to find something for each person. For May 2016, we were celebrating both my husband, Nick, and my brother-in-law, Nick's birthdays the same weekend, so I had the task of trying to figure out what to make that they would both like. Luckily, they are a lot alike. They both were deployed to Iraq around the same time and had been raving about their favorite Green Beans drink, the chai tea latte. So I knew I would have a winner in these Vanilla Chai Cupcakes. They have Chai in the cupcakes and the buttercream frosting, so there is spice in every bite.

I love beef fajitas and I love nachos. I took an older recipe from the archives that used steak for a steak fajita feel. I have always disliked how the steak falls off of the chips so easily though and decided...you know what...I'm using ground beef. I also diced the bell peppers and onion instead of slicing them into strips. These changes made the nachos so much easier to eat and I appreciated that so freaking much. I kept it simple and topped mine with just sour cream, but jalapenos, pico de gallo, and guacamole would all be awesome on top too.

I am making a slight change to the normal schedule and making breakfast on Tuesday instead of Monday. This is due to my grocery shopping switching back to Mondays. I definitely do not go early enough to make breakfast that morning. We're having a few remakes and I am looking forward to nabbing some zucchini for Thursday because last month when I had it on the menu, the grocery store was completely out of zucchini, nonorganic and organic. What are y'all having for dinner this week?

Chocolate Mousse Cake...you don't have to ask me twice! Not only is it devil's food cake, which is just my favorite...it has a chocolate mousse filling and a chocolate ganache topping. Plus in addition to all of that, there are Heath bits in every bite. It's just a wonderful cake altogether. I am pleased with how the mousse turned out too. It was so easy to make - much easier than I anticipated.
