Mac 'n Cheese for Two or Three

I was very excited to get an email from Tina over at MOMS CRAZY COOKING about a new challenge she was hosting. Along with 70+ other bloggers, we will find a themed recipe each month from another blogger, make it, and all blog about it on the same day at the same time. We'll be hopping and voting on our favorite recipe and Tina will announce and feature the ultimate recipe for that month!

September is Macaroni & Cheese Month. So today everyone is posting some awesome macaroni and cheese recipes. Make sure to check the other bloggers' postings out too :)

My recipe comes from my new blogging buddy, Desi @ SteakNPotatoesKindaGurl. This is definitely one of the better macaroni and cheese recipes I've tried lately. Next time I'm going to try adding a dash of hot sauce - this time I didn't have it. I find that little dash goes a long way in homemade macaroni and cheese!

What you need:
  • 1/3 cup sour cream
  • 1/3 cup milk
  • 1 1/4 shredded sharp cheddar cheese (I upped mine to two cups)
  • 3/4 cup elbow macaroni, cooked and drained (I made 1 cup so I could have 3 servings)
  • 2 tablespoons chopped onion
  • dash of paprika
Directions:

In a medium bowl, mix together sour cream and milk.

Stir in cheese, onions and macaroni.

Pour into a greased baking dish. I used a 9x9-inch pan. Sprinkle on paprika and cover with foil.

Bake at 325* for 25 minutes.
