Carne Asada Street Tacos

Why have regular tacos when you can have street tacos with grilled carne asada!

I've mentioned many times that my husband has been obsessed with authentic Mexican food after traveling to San Diego for work over the past few years. I am fairly certain he lives on tacos while he's there. I know my tacos at home will never come close to the authentic food, but I do try and they are really tasty still. So these tacos were a hit because honestly you cannot go wrong with steak tacos. Plus the toppings that go with are pico de gallo, guacamole, sour cream, and cotija cheese.

Salsa Verde Pepperjack Chicken Salad

Every salad should be like this with perfectly marinated chicken and lots of veggies with a fresh mango dressing - a little spicy and a little sweet!


I adore a salad for dinner and I have been enamored with many of the recipes I've tried lately including this one. It checks the salsa verde box for my husband (who wants all the salsa verde all the time) and it has spicy pepper jack cheese cubes throughout it, avocado, corn, bell peppers, and mandarin oranges. I cannot even with how awesome the combo from veggies with oranges was! We don't eat a lot of oranges because my oldest is allergic, but this was fine because I didn't have to put oranges with his salad. I really loved the mango dressing - it's yogurt based and fabulous!

Grilled Chicken with Strawberry Salad

Hello, fellow internet people. So apparently the big thing now that everyone is noticing (and hating) is that food bloggers like to write stories in their posts. Fun fact: this is for Search Engine Optimization reasons. Also fun fact: I am awful at it. Sometimes I have trouble even describing the food with words other than variations of good (thanks, Thesaurus) or delicious. I say cut the food bloggers some slack with the stories and just scroll for the recipe. However, I think we can all agree that in-post ads AND pop-ups for subscribing to mailing lists/social media page follows are HORRIBLE. Anyways...here's today's recipe: SALAD! :)

Cranberry Bliss Bars

These copycat Cranberry Bliss Bars are the perfect winter treat with a chewy sugar cookie base with cranberries and white chocolate topped with cream cheese frosting!

Every year, I look forward to getting the seasonal Cranberry Bliss Bars at Starbucks. We have a little Starbucks in our grocery store and it's a nice little treat to get one while grocery shopping. The cookie part is chewy, the frosting is creamy, the cranberries are tart, and then there's the white chocolate. They are rich little bars, but so delicious. A must for the winter season, if you ask me. The original has orange zest in it, but my oldest is allergic to oranges (and possibly pineapple - we're waiting on his results for that and he is devastated that he may not be able to eat Hawaiian pizza anymore), so I just subbed in a little lemon zest. It's still got that bright acidic zing needed to offset the rest of the recipe.

This month's Fantastical Food Fight theme is SALAD. I'm ridiculously excited about this month's theme. It was chosen due to May being National Salad Month (in the US) and what a more perfect time than when loads of fresh produce is in season! I decided to share this salad that is easy to throw together and has blueberries, strawberries, and mandarin oranges inside it.

The chicken can be seasoned how you wish and then it's a matter of throwing the ingredients together with poppy seed dressing and your meal is ready to go.

Orange Rolls

This recipe makes very fluffy rolls and an enormous amount. I sent almost a whole pan with my husband to work, but you could just as easily freeze the leftovers for a lazy Sunday morning.

Recipe from The Sisters Cafe
What you need:
  • 2 cups warm water
  • 2/3 cup nonfat dry milk
  • 2 tbsp. yeast
  • 1/4 cup sugar
  • 2 tsp. salt
  • 1/3 cup butter
  • 1 egg
  • 5 to 5 1/2 cups flour, separated
  • 1/2 cup softened butter
  • 1 cup sugar
  • 2 tbsp. orange juice
  • 1 1/2 cups powdered sugar
  • 3 tbsp. orange juice
Directions:
Combine water and dry milk until milk is dissolved.

Add yeast, sugar, salt, butter, egg and 2 cups flour.
Mix on low until incorporated, then medium for 2 minutes.

Add 2 more cups flour. Mix on low until incorporated, then medium for 2 minutes. 
Add 1/2 cup flour and mix again.
Cover and let rise until doubled. Punch down.
Turn onto a floured surface and flour top lightly. Separate into 3 pieces.

Roll out into 9x13-inch rectangles.
In a bowl, mix butter, sugar, and orange juice together.

Spread 1/3 mixture onto each rectangle.

Roll up like a jelly roll and cut into 1-inch slices.

Place into a greased baking pan and let rise until doubled.

Bake at 350 for 20 minutes (some may cook faster, mine took 25 minutes).
Mix together powdered sugar and orange juice for glaze.

Drizzle with orange glaze when done cooking.
