Smothered Baked Chicken Burritos
Occasionally, I like to make something that is maybe a little more involved and this recipe is that. The shredded chicken for the burritos, I'm sure, could be made ahead before the day you make the actual burritos. But they are also fine for the day of. The chicken is in the crockpot - so set it and forget it. Then you assemble the burritos for baking and prepare the cheese sauce while they bake. It's a lot of ingredients, but not as much work as much as prep.

Summer Grilled Corn Salad
The perfect summer side dish for any cookout - bright, fresh, and light!
I have some side dish recipe saved to try but I honestly usually forget about them. I tend to like to just make a couple vegetable, carb, and/or starch sides and call it a day. But I made this last summer and it is one of my favorite things ever. I love sweet corn and especially enjoy fresh sweet corn cooked on the grill. I love that this is just a ton of veggies. I did not make the avocado cilantro lime dressing but chose to use some of the elements of it so that Nick would eat it. He doesn't do dressing.Monday, May 10, 2021
Loaded Turkey Taco Salad

I've been making a lot of Taco Tuesday meals with turkey lately. Part of that is due to my hereditary high cholesterol kicking in and the other part is that ground turkey doesn't taste too different from ground beef with taco seasoning mixed in, so it isn't this huge "culture shock" of a different protein. I really enjoy this particular salad recipe because there are no tortillas to fuss with and I love salads. Lemon Pepper Tuna Lettuce Wraps
A quick meal to throw together with just 5 ingredients!
I made these lettuce wraps forever ago when Nick was in Georgia for army training right before the lockdowns started in the U.S. in 2020. The kids are pretty good about eating salad, light meals. I adored these because you don't have to cook anything. If it weren't for tuna breath, these would be awesome for a work lunch. Spicy Chicken & Avocado Tacos
A super simple chicken taco recipe loaded up with avocado and creamy cilantro lime sauce.
So I initially had this post almost ready to go and then realized that I remember making these and looking at it and going...where's the heat? How is it spicy? So when I did the marinade, I chose to add cayenne. Otherwise there is literally nothing that adds any bit of spiciness to the recipe. This is a really simple way to make chicken tacos and has lots of bright flavor from the lime. I love the creamy cilantro lime sauce a ton.

Carne Asada Street Tacos
Why have regular tacos when you can have street tacos with grilled carne asada!
I've mentioned many times that my husband has been obsessed with authentic Mexican food after traveling to San Diego for work over the past few years. I am fairly certain he lives on tacos while he's there. I know my tacos at home will never come close to the authentic food, but I do try and they are really tasty still. So these tacos were a hit because honestly you cannot go wrong with steak tacos. Plus the toppings that go with are pico de gallo, guacamole, sour cream, and cotija cheese.Sunday, December 20, 2020
Grilled Salsa Verde Chicken
A simple dinner that is perfect for a Taco Tuesday with fresh avocado and tomato, plus corn and rice with a tortilla for serving.
Nick became obsessed with salsa verde when he started traveling to San Diego for work in 2019. He wants salsa verde alllll the time. He also is kind of obsessed with this style of serving up food where the fixings are all on the side and you build your own dinner on a tortilla. I personally love taking a bite of each topping and a bite of tortilla. This is a really simple recipe but is really fantastic despite being so simple. You can definitely switch it up a little - like add different seasonings to the chicken or roasting the corn or tomatoes. Even charring the tortilla on the grill!

Today's recipe is one of the recipes I've had for years and years and didn't make it. I feel like I do this a lot and then kick myself when I finally make it because it's a new favorite and I could have been enjoying it all along. We have been loving avocado and queso fresco lately, so it was nice to see those in a recipe and this is definitely something we will make and enjoy for years to come!

Southwest Chopped Chicken Salad
Salads are some of my favorite dinners - especially when they have all the things like chicken, tomato, beans, corn, avocado, and more!
This salad is nothing extremely unique or something that will blow anyone's mind, but it is a fantastic, quick dinner and I really enjoyed it. The original recipe came with a salad dressing, however, I'm about the only person who eats dressing in the house and depending on how busy the day is that I'm making the recipe, I'll skip making the dressing and grab the premade kind. Crispy Chicken Tacos
What could possibly make tacos better? FRIED CHICKEN!
I'm trying to be good and get my posts for the week scheduled before the week starts. I'm almost there but I've been doing a lot of crocheting and watching Youtube instead. I got super behind on all my subs while doing college (I'm still watching September videos - eesh). This lovely recipe is genius. It's not a super involved recipe. Really you just marinade and fry the chicken and you're good to go. And really...tacos with fried chicken?! YES!!! That's just the best idea ever! We kept ours really simple and they tasted wonderful, but you can absolutely add whatever toppings you want. You could make them spicy with hot sauce or add cayenne to the marinade. It's whatever you want!

Mexican Meatball Soup
If you've ever wanted tacos in soup form with all the toppings, this soup is for you!
In these recipes, I can find the ingredients list a little overwhelming. However, what I like to do for prep is get all the spices measured and mixed together in a bowl. I like to get all my ingredients out and separated by where in the recipe I need them. It makes it so much more efficient when all is said and done to make the recipe when a little bit of preparation is done. I love how packed full of veggies this recipe is and I think the toppings work together with the soup so well too. It's like tacos but in soup form and I love it!

Loaded Nachos
Nachos and cheese is classic, but why not load them up with fresh pico de gallo, avocado, and more!
Now that I'm Team Avocado, I've been trying to eat them as much as possible. They are also supposed to be a good food for when you have high cholesterol, so that's also a bonus. I was (for the longest time) the only person who would eat avocado, but after Nick took almost a year's worth of business trips to San Diego where he got very authentic Mexican food, he has also taken a liking to avocado. These nachos are the best because they are loaded with avocados and all the other best toppings, like fresh pico de gallo, lots of cheese, cilantro, beef, and beans!

Breakfast Burritos
Homemade hashbrowns, sausage, and egg burritos with loads of toppings are a great way to start the day!
I'm unsure how Nick stumbled upon it, but he got us all hooked on Parry Gripp songs. One of our favorites is Breakfast Burrito. It's absolutely ridiculous but it's the anthem when we make our breakfast burritos. I'm not reinventing the wheel here by posting this recipe, but I do really enjoy it. It has homemade hashbrowns and not pictured is the avocado I put on my burrito. I love that these breakfast burritos have a more Mexican feel to it with salsa, cilantro, and avocado in it.

Mexican Egg White Omelet #FantasticalFoodFight

This month's Fantastical Food Fight theme is OMELETS. January is National Egg Month and what better way to celebrate the egg than by making omelets?! I used to make omelets a whole lot but I don't really any more because Nick does intermittent fasting and doesn't eat breakfast and I'm trying to avoid eggs because of how much cholesterol is in them. However, the cholesterol is in the yolks and I thought I'd try this egg white omelet recipe because it's kind of the best of both worlds. I still get to eat omelets and it isn't super high in cholesterol.I have to be completely honest and say that I wasn't really thrilled with taking the yolks out, but I'm trying to be open with compromises with food. I love food and I'm not happy about some of these changes. Even knowing all the ingredients (which are definitely some of my favorite things), I was still skeptical. And then this omelet BLEW ME OUT OF THE WATER! I made one with yolks for Nick and he was also super impressed. Honestly, the best omelet I've ever eaten and I think Nick agreed. I really didn't miss the egg yolks and I was surprised at how filling the 3 egg white omelet with the fixings was. Taco Burgers
Burgers with green chillies cooked into the beef patties and topped with a creamy taco sauce and avocado!
We've had a lot of burgers with taco toppings lately and have been eating a lot of queso burgers when we go out to eat too. Chili's and Applebee's have good queso burgers. This Taco Burger is fairly simple but has a lot of wonderful flavors that work together so well. The ground beef is mixed with green chillies, taco seasoning, and onions. There is taco sauce that goes on top and don't forget the avocado!!

Grilled Cobb Salad
Cobb salad has never been so good with grilled chicken and asparagus and roasted corn and tomatoes.
Cobb salads are probably my favorite kind of salad because I love that there are eggs and bacon in them. This particular cobb salad is perfect for summertime because you can grill the ingredients. I chose to sub in canned corn and roast those with tomatoes in the oven instead of grilling. I did grill my chicken and asparagus though.
