Korean Spicy Noodles
I love a good stir fry and this one has marinated beef with veggies and noodles! I think I typically do stir frys with broccoli and rice. I was unable to get my hands on the Korean sweet potato starch noodles but I definitely would love to for future makings of this recipe! The original also had mushrooms which I omit, so be sure to toss some of those in with the onions and carrots if you like them!

Spinach Dip Pasta
Creamy spinach dip turned into a main dish hit!
I made it one whole month and have posted each Monday! Go, me! I'm hoping to continue on this way for the full year. I'm in desperate need of some recipes for my meal plan that I have forgotten about. This is definitely one of those recipes. I think pretty much everyone in my family eats spinach dip and so the thought of combining it with chicken and pasta was super exciting to me. Creamy Herb Pasta
A quick, easy pasta dish with creamy herb sauce!
Hello and happy 2023! I'm attempting to see if I can get myself on a posting schedule. My goal is to maybe post once a week and go from there. I think I only posted 3 recipes last year, so I'm already a third of the way there :)
I know everyone is now very anti-words in recipe posts, but I'm going to throw some out there because I've been so MIA. I started my career in mid-2021 as an accountant for tv/film production companies at a local firm. After 14 years as a stay-at-home mom, it was a huge transition. I still struggle with trying to juggle everything but I'm trying to cut myself slack and really work on my time management. There are a lot of times where I forget to thaw meat that I need and I have to say, my 2022 birthday gift was an Instant Pot and holy baloney - that has been a lifesaver.
This recipe is a great recipe for chaotic nights. I really love when things can just be thrown together and it's very simple ingredients. I feel like you could switch up the vegetable if you really wanted to.

Olive Garden Chicken Alfredo
This one is pretty self explanatory - a copycat Olive Garden alfredo. We love a good chicken alfredo in my household and we definitely loved this recipe. What's super wild to me is seeing the island from the old house in these pictures because I am that far behind on sharing recipes LOL.

Broccoli Chicken Casserole
This casserole is cheesy with yummy broccoli and chicken - sure to be a family favorite.
We tend to eat a lot of broccoli in our household because it's one vegetable we all really like a ton. Casseroles are something I think a lot of Americans - especially in the Midwest - grew up eating, so they are very much a comfort food for me. This one has homemade sauce and a good amount of cheese. Super easy to make and really yummy. The original recipe had mushrooms (that you saute with the onions) but Cami is the only one who eats mushrooms so they usually get omitted.Friday, August 13, 2021

I think I'm starting to edge into the recipes I started making when we first moved back in April 2020 to our new home. I cannot express how excited I was for the amount of natural lighting - it has really made taking pictures of food way easier - especially since I have gotten rid of my DSLR and am just using my phone. This recipe was a great, easy meal for the hecticness of moving. I didn't have pictures of it, but I loved it with ketchup. Creamy Chicken Lasagna
Who needs red sauce beef lasagna when you can have chicken lasagna with a rich cream cheese based sauce and spinach!
So my family doesn't like lasagna. None of us do. However, we have been trying white sauce recipes or recipes that utilize cottage cheese instead of ricotta and that seems to have served us well. Spinach Artichoke Pasta
Who needs spinach artichoke dip when you can have your favorite appetizer as a dinner?!
I am always surprised at what my family is willing to try when I pick something for the meal plan that is more "off the cuff" - I think that Nick will eat spinach artichoke dip sometimes, but not 100% sure. The kids have never had it. I love it! Of course, this being a one pot meal was a plus and I really liked the garlicky spinach. 25-Minute Spicy Ramen
This ramen has ground pork, carrots, cabbage, sweet peppers, and a kick of heat!
My family has been eating different variations of ramen lately and this one was super fun because it has ground meat and seems like it's way easier to throw together than the others (it's really not but it seems that way with ground meat). I think this is one of the first ramen recipes I've made with any kind of nuts and I really love savory dishes with peanuts - SO MUCH. So all in all, this has a really great balance of flavors and textures. And it's quick to make!

Chicken Tetrazzini

Chicken tetrazzini is one of my favorite pasta dishes of all time. I wanted to try a slightly different recipe and this one was the first one I had saved in my Pinterest boards. Bacon Cheeseburger Pasta Bake
This fantastic meal is fully cooked in the oven - pasta and all!
I know that the instructions say to do this recipe in a 9x13-icnh pan. I definitely would have been for whatever reason - I'm guessing my pan was probably dirty - and my cookware is safe to use in the oven. I did use foil instead of the glass lid. I cannot wait to make this again in the proper pan because it was so yummy. Kind of reminded me of what Hamburger Helper was meant to be, except it tastes way better and makes way more. I just love the idea of throwing everything into a pan and baking it. No fussing over the meal for an hour. It also tastes just like a cheeseburger.Friday, April 09, 2021
Ratatouille Pasta
The classic French vegetable dish turned into an amazing sauce for a meatless pasta meal!
I have never had ratatouille but I really wanted to try it and I took the opportunity to try it when Nick was away for army training because it's meatless. The kids were not the biggest fans of it because they don't like eggplant and only Cami likes zucchini. I, however, enjoyed it a ton because it's a pasta dish with a bunch of fresh veggies. I definitely want to try actually ratatouille at some point, so if anyone has a tried and true recipe for it - point me to it!!

Slow Cooker Creamy Beef Stroganoff
Slow cooked beef stroganoff is the best stroganoff, especially this creamy version.
I absolutely hate when I cannot get a good picture of a recipe. This is actually the second attempt for this one and I give up. It is not an appetizing picture, but it's a really great recipe. I remember seeing the picture and thinking the pasta cooked with the beef, that isn't the case though. The beef and sauce part cook on its own first and then you stir in the pasta later. You can do mushrooms in this, as per the normal way to make it, but we don't really do mushrooms.

Grilled Chicken Caprese Orzo Salad
This refreshing pasta salad is way better for dinner than as a side with its grilled chicken!
Caprese is one of my all-time favorite food combinations. I don't think I've yet to try a recipe that has tomato, mozzarella, and basil (and sometimes balsamic vinegar) that I haven't liked. This one is great because it's not super heavy with a vinaigrette style dressing with lemon instead of vinegar for that acidity. I replaced agave syrup with honey because it's what I had on hand and is my go-to substitution. I loved that this was grilled chicken. I also absolutely loved that this had mozzarella pearls instead of shredded mozzarella. Mozzarella pearls are just so much better!Monday, March 22, 2021
Penne Alfredo with Broccoli and Bacon
This quick pasta dish has homemade alfredo and crisp broccoli with some yummy bacon in there too.
This March is flying by compared to last March and it's crazy. I remember making this meal last year and being grateful that the bacon wasn't being overpicked and I was able to find some broccoli and pasta. I appreciate this recipe with how quick it is. I find a lot of pasta recipes that are able to be made in under 30 minutes - maybe that's why I like pasta so much! I also like this recipe because it's lite on meat, but you could absolutely add some chicken to it if you wanted.

Four Cheese Garlic White Cream Pasta
This quick pasta is super cheesy and garlicky - and pairs well with chicken!
I love this pasta recipe because it has my favorite things: cheese and garlic. I always put the amount of minced garlic the recipe calls for, but I can guarantee that I rarely ever put that amount in. I just dump in like 3 spoonfuls or more in. There is no such thing as too much garlic. I like the Italian four cheese blend of cheese for this recipe so I don't have to buy four different kinds of cheeses out just for 1 1/2 cups. I made Italian seasoned chicken to go with but I think Italian sausage would be great too.

Angel Hair Pasta with Italian Sausage
A quick pasta dish with sausage and red onions - and mushrooms if you like them!
I really like the simplicity of this recipe. The original recipe had mushrooms (you cook them with the onions if that's something you want), but only Cami eats mushrooms... so no mushrooms here. If you want to make this vegetarian, the original poster said you could sub in the sausage for more mushrooms and red onions. So it's super flexible to what you want.
