Cheesecake Factory Cashew Chicken Copycat
I still haven't been to Cheesecake Factory even though I have made many copycats throughout the years and we literally have one in our mall. Still haven't gone. Maybe we will once the pandemic dies down a little, but until then, I'll just keep making copycats. I love this copycat because I adore cashew chicken stir fry or whatever this dish is. I really liked this method of making a slurry from rice flour and I really loved the spicy soy sauce too.

Caramelized Cashew Ginger Chicken Stir Fry
Marinated chicken and caramelized cashews add so much flavor to this stir fry!
I feel like I've made a lot of stir frys over the years and continue to save stir fry recipes even if they aren't something crazy different. What was a little different about this particular stir fry is that the chicken gets marinated before lightly breaded. In addition to the marinade, you make really lovely, totally addictive caramelized cashews to go on top. I mean, these cashews are good on their own. They'd be a great snack. But they are even better on top of this stir fry.

Garlic Chicken and Broccoli Cashew Stir Fry
This stir fry is quick and easy and so full of flavor!
Stir frys are such great quick meals on busy nights. I was looking forward to trying another stir fry with cashews. This one was quick and really flavorful too. Not much else to say about it :)

Bacon Piggy Brittle #FantasticalFoodFight

This month's Fantastical Food Fight theme is CANDY. I originally was going to do hard candy, but had trouble finding a recipe that may fit the theme and figured my blogging friends might also have that same problem, so I broadened our theme to candy. There are so many good types of candy to choose from: fudge, toffee, taffy, brittle, hard candy, etc. I decided to try brittle once again. I haven't had the best luck with brittle. I think I need to invest in an instant read thermometer. But this recipe wasn't terrible at all. I think I just got it slightly too dark, but not burnt. So I can absolutely deal with that.This was a recipe from Food Network Magazine that was in the "Name the Recipe" thing that they do and I could not find the name of it for the longest time. I went ahead and made it and decided to name it Bacon Piggy Brittle before finally discovering that it was named "This Brittle Piggy" which is SO cute. So whatever name you call it, it is definitely perfect for any bacon lovers you may have in your life, including yourself!

Slow Cooker Cashew Chicken
This delish Chinese-American recipe is slow cooked in a garlic sauce and crunchy cashews!
This cashew chicken is very easy to make and is a wonderful Chinese-American dish. I chose to add my cashews at serving, so they maintained their crunch. You can throw them into the slow cooker at any point during cooking though. It's totally up to you. I have tried a few cashew chicken recipes and this is definitely my favorite. If I could change one thing, it would be to top it with fresh green onions for serving. The other recipes I've tried had onions and I think that is the only thing missing.
