This is probably the very best oatmeal I've had. It was incredible. Now that I'm a lemon lover, I can't go back and this has just enough lemon to keep it from being overwhelming.

I love stir frys - love them. So for my birthday in September I made stir fry for my birthday dinner. I meant to do it with green beans, like the original recipe did. But I guess I used up my green beans the night before.

Mocha Cookie Crumble Frappe {Copycat}
It's time for another copycat! I've only had one sip of one of the real things. It was okay, but I wanted to learn how to make it at home because my husband liked it. The at-home version was SO much better. And it can be made all-year round. I'm not sure how Starbucks' schedule works or secret menu or what not, but that is just too much headache for me and too expensive. So making this at home is easy for your brain (as long as you don't drink it too quickly) and your wallet!

Secret Recipe Club: Asparagus Gruyere Tart
This month, my assigned blog was Fried Ice & Donut Holes. Melissa, who is a teacher by trade, started her food blog in 2009. I love the story behind her blog's name and she has some GREAT recipes, it was so hard for me to choose.
When I saw her Asparagus Gruyere Tart, I was on board. My husband had been begging for steak when he got home from visiting his family and seeing his little brother graduate from Basic Training. I thought this tart would be the perfect side (instead of having potatoes) and we just recently tried gruyere for the first time and absolutely love it!

Pumpkin Pie Milkshake
I am in love with pumpkin anything. I have an entirely too large hoarding collection of pumpkin recipes and I've been trying to make as many as possible while it is in season. Plus I have discovered that Matthew, my 5 year old, is a pumpkin fiend like his momma :)

Scandinavian Cucumbers
I grew up in Minnesota - I'm mostly Norwegian (probably a little German too, but mostly Norwegian). My great-great grandfather came from Norway over to America and settled in the area that became the town I grew up in. We all celebrated Norwegian holidays and I grew up eating a lot of typical Norwegian food. My mom made cucumbers like this allllllll the time. It was probably my absolute favorite way of eating them. They are kind of tangy and sweet at the same time :)

Italian Creme Cake Cupcakes
I had my first Italian Creme Cake in high school when one of my friends' mom made it - with fresh walnuts. It was magical. This recipe is actually a cake recipe, but it transferred pretty well over into a cupcake recipe. It made about 2 dozen cupcakes, give or take a few cupcakes that may have been eaten before cooled and frosted. I took these to the monthly FRG meeting and they were gone before I knew it! I added the sprinkles that look like little fragments of diamonds - they made these look extra cute!

Cheesy Chicken Enchilada Pasta
I really love trying new pasta dishes because I never ever get sick of pasta. I didn't really know what exactly to expect out of this one as far as flavor goes, but holy baloney! It was so packed full of flavor - there was a hint of bite, but it was rich and cheesy. Just the smell alone makes your mouth water. It is one of my new favorites and I cannot wait to make it again.

Chicken & Linguine with Tex Mex Pepper Cream Sauce
Throwing together tex mex with pasta sounded amazing to me. I was incredibly impressed with this sauce. We paired it with a lemony seasoned chicken breast.

Baked Burritos
These were another quick, portable dinner that I made one night to take to my husband on staff duty. They were done in no time at all. I wrapped them in aluminum foil and stuck them in a lunchbox - and we were on our way. They are basically baked tacos and there is nothing wrong with the simplicity of a taco. The crunchiness from baking them was outstanding!

Caramel Frappe {Copycat}
I'm kind of a huge frappe fan. I don't really go out of my way to get Starbucks because (don't shoot me) I don't think it's all that good. In fact, most of their drinks are just weird tasting. Except the frappuccinos. I love the frappuccinos. I also completely love the BK Caramel Frappe. I know McD's has one too.
But what in the world do they put in that stuff? I mean seriously, do people even think about it? But I digress...I made a frappe at home...and so easy and more delicious than the stuff you get at any place - gonna make this all the time!

Pan-Roasted Chicken with Lemon Garlic Green Beans and Potatoes
I have seen this on Pinterest over and over again. I pinned it and then forgot about it. I've been trying to meal plan from Pinterest more and more, so I decided it was finally time to make this. It was really good. I didn't find the baby red potatoes, like the recipe stated, so I used half the amount with regular sized red potatoes. We thought it was a bit too many potatoes and we want to add more green beans. There is just something so satisfying about eating fresh green beans!

Man Food Week: Hot Biscuits & Gravy
I hope you all loved man food week and found something to impress the men in your life - whether it be a significant other, dad, sibling, uncle, etc.
I hate gravy. I hate biscuits soggy with gravy. So you might ask why on earth I am posting a biscuits and gravy recipe?! Well...my husband and kids LOVE it. My mom-in-law makes incredible biscuits and gravy every time we visit - all 3 of them beg for it and are spoiled! However, we only visit two times a year and it's never long enough. I figured that I should probably learn how to make it for them until we move in with Mom...I mean, visit her more often :P
I did taste a bit of the gravy and I'd have to say, it was actually pretty tasty.

Man Food Week: Kamikaze Fries {Copycat}
I love Food Network - one of my favorite shows is Triple D. Guy Fieri is just hilarious and he always shows the best, best shindigs. My Before I Die board on Pinterest is turning into Triple D stops! I was watching reruns one night and saw Naked City Pizza (in Las Vegas) making these unbelievable looking French fries called Suicide Fries. Unfortunately, all my googling didn't result in an exact recipe. So I rewatched the clip and jotted down what was in them. So here is my take on Suicide Fries.
We threw our kamikaze hot sauce into an old Frank's hot sauce bottle since there was more than enough to go around!

Tasty Thursday #85: Man Food Week: Rosemary Beer-Marinated Pork Chops
Welcome back to Tasty Thursday!!
Nothing says man more than a tall beer, right? I knew I'd want to make these for Nick who is relatively unimpressed by pork chops. I've been trying to make the best of the best recipes to make him like pork chops, so we can have a little more variety in our menu. I thought these were delicious, juicy, and not overwhelming flavored with beer. I have been using my George Foreman grill a lot lately as the weather cools down (I'm writing this in on 19 September, but here in November, this obviously will apply more than in September!) - and I got some gorgeous grill marks on these chops effortlessly!

I love the occasional hard shell taco, but I hate it breaking and everything falling out everywhere. I also love refried beans on tacos. Any man would love steak instead of ground chuck...I mean c'mon! It's steak! These were the perfect combination of meat, crunch, chew, and toppings.

Man Food Week: Popcorn Chicken
Last month, I did pumpkin week. I don't remember when I decided to start doing themed weeks, but it may have been a way to get some recipes made with the same theme. I decided since football season is well under way that a little man food was a necessity! I'm hoping to get my hubs to narrow down his favorites list and share with y'all later on this week what he considers to be the best man food I make :)
This first recipe is bound to be not only a man-pleasing recipe, but a kid-pleasing, crowd-pleasing, family favorite. We made some without buffalo sauce for the kids - and both Nick and I tested out the recipe plain too and the seasoning is just extraordinary! It's a perfect blend and great without extra sauce. Of course, tossing it with buffalo sauce was just out of this world. These are going to be made a lot. They are great for an appetizer, but also great with fries, potato skins, etc for a delicious dinner!
