Butter Garlic Chicken Bites with Lemon Asparagus
I love recipes that seem so simple but end up blowing my mind. I know going in that I was going to like this recipe because it's butter, garlic, and lemon. Honestly, how can you go wrong?! This is definitely one of my all-time favorites because it's simple but it's so dang good. I love it. This one doesn't take a lot of effort or time to make. You can pair it with a good crusty bread and potatoes or a salad, etc.

Asparagus, Bacon, & Herbed Cheese Pizza
The perfect springtime pizza with asparagus, bacon, and dollops of rich herbed cream cheese!
I have found many recipes lately with a little cream cheese in them and I don't know what it is but I'm obsessed with it. I have always been a light on the sauce for pizza person, and I find that I really love pizzas that don't have red sauce (and I use pasta sauce for pizza sauce and I love pasta sauce). This pizza has olive oil and I love that the toppings are so simple but so delicious. I love the asparagus and bacon. Plus those little dollops of cream cheese - yum! Chicken Madeira
Sauteed chicken pan-basted with a sweet wine reduction - topped with cheese and broiled. Seriously fantastic.
Alright guys, here is another delicious recipe that originally has mushrooms in it. The only one in our immediate family who likes mushrooms is my daughter, Cami. Nick and I will eat mushrooms if they are small and mostly on pizza, but we will not eat them when they are in a large quantity at all. So for this recipe, the mushrooms went away. I thought this was a great recipe with a wine glaze type deal going on. You are supposed to use Madeira, but I used a local sweet white wine that we had on hand. I love the asparagus with this and the broiled cheesy topping. The original recipe noted to serve this with mashed potatoes, but honestly do your potatoes any which way. You can't go wrong with a baked potato or roasted potatoes!

One Pan Creamy Lemon Pasta with Chicken and Asparagus
The perfect springtime pasta dish made in one pan under 30 minutes.
I love lemon in savory dishes and now that spring has sprung, I want some lemon savory dishes! This recipe utilizes asparagus too, which is in season and usually a bit cheaper during this time of year. This recipe is a one pan recipe that can be ready in under 30 minutes and it's a fairly easy one to make. Nick actually made this last year when Cami had her weekly choir practice after school across town and I took her out there and then went to the library to study while she practiced. It was fantastic and we made it again just a few short months after. It's definitely going to be a regular recipe.

Grilled Cobb Salad
Cobb salad has never been so good with grilled chicken and asparagus and roasted corn and tomatoes.
Cobb salads are probably my favorite kind of salad because I love that there are eggs and bacon in them. This particular cobb salad is perfect for summertime because you can grill the ingredients. I chose to sub in canned corn and roast those with tomatoes in the oven instead of grilling. I did grill my chicken and asparagus though.

Roasted Garlic Potatoes, Asparagus, and Sausage
This easy sheet pan meal has potatoes, asparagus, carrots, onions, and sausage!
Sheet pan dinners are just awesome and roasted veggies are also awesome. It really cracks me up to think that I wouldn't go near smoked sausage/kielbasa when I was a kid. Now look at me! It's one of my favorite proteins to use for a quick meal.

This month's Fantastical Food Fight theme is ASPARAGUS. We are almost in prime season for asparagus and what better way to bring in the new season of food than with sharing tons of asparagus recipes. We have been having asparagus with Easter dinner over the last few years and one of our go-to recipes is this Asparagus Casserole. Think green bean casserole but with asparagus.I would ask for this over green bean casserole any day of the week even though I love green beans. I adore asparagus and in this casserole, it's so addictive! I did switch up a few things from the original recipe to include omitting mushrooms because we're not huge fans of mushrooms (Cami loves them, but the rest of us, nope!). None of us really care for Swiss cheese so I subbed in Gruyere which turned out so very well. It's a wonderful side dish with a baked ham. I cannot wait to see what other asparagus recipes my blogging pals have to share today!

Honey Garlic Chicken Stir Fry
Quick stir frys are the best kind of dinners to use up some fresh veggies!
I was so excited to try this stir fry because I am used to stir frys being broccoli, carrots, and bell peppers. I rarely see squash in them and that made me such a happy camper. I love squash. I will happily eat all the squash and all the recipes with squash. This recipe is especially wonderful because the honey garlic sauce is mouthwateringly good! It's the perfect balance of salty and sweet and savory to compliment the veggies and chicken. The best thing, of course, about stir frys is that they are quick. This one can be made in under 30 minutes!

Creamy Chicken and Asparagus Pasta
This spring pasta dish has delicious crisp tender asparagus and bright sweet bell pepper with chicken and a creamy alfredo-like sauce.
I'm a little late posting today and I'm absolutely blanking on what to write for my little paragraph. So let's break the fifth wall a little. My husband was talking to me recently about how reddit was having conversations about how food bloggers talk too much and they have to scroll past a novel to get to the recipe. Years ago, it was a big thing for bloggers to improve upon their story-telling and write stories for each post. This has never been a strong suit of mine when I don't have anything to talk about. I'm a talkative person and can be rambly, but not all the time. So my posts typically are pretty short and I like that. I was glad to hear that a lot of people really don't care about it and just scroll past the words to get to the recipe. I'd be lying if I said I didn't do the same thing a lot of the time. Do you guys read the stories in food bloggers' posts?
Okay, now to talk about this recipe really quickly. This pasta recipe is similar to an alfredo sauce but not 100% alfredo. I love that it has asparagus and red bell pepper. It's a great spring recipe. It's not one pot, but it is pretty close, so it's nice to not have a billion dirty dishes to clean!

Roasted Garlic and Asparagus Soup
This soup is just what you need on a chilly spring day, served up with a side of grilled cheese sandwiches!
This soup will definitely not be for everyone - especially if you are not a fan of asparagus. However, I love asparagus and wish I had been able to enjoy it much earlier than my adult life because YES! Roasted asparagus is my favorite form of asparagus and when I saw this, I was intrigued because it seemed like it would make a great soup. I didn't really have the rest of the family's blind trust with this because it didn't have meat and it almost looks like a cream soup, which I guess it almost is with the milk. Thankfully, even my asparagus-hating oldest son liked this soup. He thought that it didn't taste as bitter like asparagus normally does and I agree that the asparagus does taste a little more mild and is perfect with the garlic. We served up this wonderful soup with just regular ole grilled cheese sandwiches for a more filling meal :)

One Pan Parmesan Lemon Chicken and Asparagus #SundaySupper
This citrus chicken and asparagus is perfect for spring -- and it's made in one pan!
I am back again for another Sunday Supper event and today's event is CITRUS RECIPES THAT WILL MAKE YOU SMILE hosted by Lisa of Jersey Girl Eats. I chose to share this lovely one pan recipe because not only does it fit the "citrus" bill, but it's also got the yummy springtime veggie, asparagus. Since spring has sprung, I had to share a spring recipe!
This lovely one pan dish has crispy, crunchy lemon garlic chicken and roasted asparagus with lemon garlic seasoning. All of it has Parmesan cheese in it. And then it's topped with a honey lemon "sauce", so-to-speak. It's so bright and lovely and I can't help but just love this recipe.

Pasta, Chicken, & Asparagus in Garlic Tomato Sauce
This pasta is served up with asparagus, seasoned chicken, and a light garlic tomato sauce.
Sometimes I get antsy to post a recipe before I've had a chance to make it again. This one is a fabulous recipe. The sauce is really light and not really so much a sauce as it is sauteed tomatoes and garlic. I did adjust the recipe some because I didn't have precooked asparagus or chicken. I did follow the original recipe as far as amounts go, but I feel that it would be better with more asparagus and the grape tomatoes halved. So that is definitely what I will be doing next time I make this lovely dish. And, of course, I will add more basil. Because basil is life.

For those who don't know, Secret Recipe Club is a great little group...well, large group, of food bloggers who are secretly assigned another blog each month. Each member chooses a recipe (or more) from their assigned blog and then on the designated Monday for their group, they post the recipe they made. It's a great way to feature a new blog - really discover a new blog - and help others to find new blogs to follow. It feels good to shine that spotlight on another blogger :)
This month I was assigned to Becky of A Calculated Whisk. I was totally excited to find there was another dessert enthusiast slash cat lady who is also a teacher in my group. I love finding out there are people who do it all - it makes me just want to pick their brain and want to find out all their secrets to staying sane :)
I was very decisive this month and had to choose between two breakfast-egg-casserole type thing: Veggie & Egg Hash or Sweet Potato & Kale Breakfast Skillet. I was hankering for some asparagus and brussels, so I opted for the first recipe.
And it was so the perfect choice! The veggies were just super delicious and everything worked together so well. It was pretty quick to make too :)

Roasted Red Pepper & Asparagus Quinoa

Don't know if you can see me...but I'm over here on the Quinoa Bandwagon!!
Oh yes, I made that joke :) A really lame one.
Don't mind me over here just giggling about the corny hilariousness.
Like I said, I am on board with this quinoa craze. It's just one of the most versatile and delicious of grains. It can be in savory or sweet dishes from breakfast to dinner to dessert. So what's not to like about it?
This fabulous recipe comes straight from Jocelyn of Inside BruCrew Life. She is always posting some amazing looking sweets, but she doesn't shy away from posting some incredible main dish/savory recipes too - like this one!
There are few ingredients, but that doesn't mean it isn't flavorful. The little bit in the dish goes a long way. It's perfection - y'all have to try it!

Chicken & Asparagus Penne
It doesn't get much better than this little dish. I wasn't expecting anything special from it and I absolutely inhaled it! I threw it altogether and baked it for 5 minutes instead of broiling. I covered it up with foil and ran it out to my husband who was supervising extra duty at work. It ended up feeding him, myself, Matt, Cami, and at least 7 soldiers. Everyone loved it! For five ingredients, this dish seriously blew me away!

Easy Oven Roasted Asparagus
I'm a big fan of roasting stuff in the oven. I'll go ahead and tell y'all it's because I can throw a piece of foil on my pan and then it doesn't get anything dirty - it's awesome! I hate dirty dishes. It's also awesome to have a side dish that takes little to no effort to prepare and is tasty. This asparagus is definitely all of that and more - I'm sure that this would be just as amazing using different spices to fit with different meals. Lemon-garlic is calling my name already!
