Mexican Egg White Omelet #FantasticalFoodFight

This month's Fantastical Food Fight theme is OMELETS. January is National Egg Month and what better way to celebrate the egg than by making omelets?! I used to make omelets a whole lot but I don't really any more because Nick does intermittent fasting and doesn't eat breakfast and I'm trying to avoid eggs because of how much cholesterol is in them. However, the cholesterol is in the yolks and I thought I'd try this egg white omelet recipe because it's kind of the best of both worlds. I still get to eat omelets and it isn't super high in cholesterol.


I have to be completely honest and say that I wasn't really thrilled with taking the yolks out, but I'm trying to be open with compromises with food. I love food and I'm not happy about some of these changes. Even knowing all the ingredients (which are definitely some of my favorite things), I was still skeptical. And then this omelet BLEW ME OUT OF THE WATER! I made one with yolks for Nick and he was also super impressed. Honestly, the best omelet I've ever eaten and I think Nick agreed. I really didn't miss the egg yolks and I was surprised at how filling the 3 egg white omelet with the fixings was. Tomato, mozzarella, and basil have been a very present combination in my diet lately. And they sure did make for a delicious omelet! In December, my husband and I celebrated our 10th wedding anniversary and he got me an AeroGarden as a gift. I have had problems with the chipmunks eating my plants, so I was so incredibly excited that he got me one. I never would have purchased one for myself. The first set of pods I planted in my AeroGarden was a herb variety that included two basils (that are still going strong on my porch out of the AeroGarden), parsley, chives, cilantro, and dill. I just started a salsa set of pods, but I was so excited the basils did so well and have continued to grow because basil is my favorite. It has made me want to make all the fresh basil recipes I can.

I was assigned Our Eating Habits for Secret Recipe Club at some point and had saved this recipe to try at some point, even though I didn't pick it for reveal day. My basil was going crazy and I remembered I had a caprese-style omelet that I could make and all the ingredients to make it. So voila! It was delicious. So so delicious!

Broccoli & Cheese Omelet

I love trying recipes from fellow Secret Recipe Club members and sharing them here on the blog. I, of course, do that once a month for my reveal day post, but I also love to peruse other groups' blogs other than my group, Group D. This recipe comes from Cindy of Hun...What's For Dinner? who is in Group A. I modified it to using 2 whole eggs, instead of 1 egg and 2 egg whites, but otherwise I kept it pretty much how Cindy made it. I have always loved broccoli and loved eating cheese on broccoli, so I knew I would love this recipe. I adore the almonds in the omelet. They add a nice crunchy texture that is otherwise missing in this omelet, but they don't overwhelm it with an unpleasantness by any means. I was very skeptical about adding them, but I wanted to be a teensy bit adventurous and I am very glad that I was. Thanks, Cindy, for a wonderful recipe!

Pepperoni Pizza Omelets

Before leaving for Knoxville for Christmas, I needed to clean out my fridge of all perishable items. Usually I leave the last 2 days before heading out as a sort of fend-for-yourself type deal with meals. The night we left, I had a ton of eggs and cheese and pepperoni. My husband is always begging for eggs anyways, so I figured no one would mind omelets for dinner. I also had some Classico sweet basil sauce (my favorite!) and decided to go for some pepperoni pizza omelets. They were good. They were so so good. They were also pretty filling because they are 3-egg omelets.

Western Omelet

This is another recipe that I have had since I started collecting recipes back in 2006/2007. Never made it until today. It's a quick, easy omelet recipe. I really liked having the potatoes. I actually had a little issue with some falling out, so I placed them on top. Any extra you have could be served on the side.

Omelet Italiano

I started to collect recipes back in 2006. There are still recipes that I haven't tried from when I first started collecting recipes. This omelet is one of those first few recipes.  I was never able to make one until last week. I made TWO {consecutive} perfect omelets. They were incredible!
